Hello blog friends. Do you ever run out of ideas for making a weeknight meal? I do.
I was so happy when I saw one of my blog/Instagram friends, Shirley from Intelligent Domestications post up on Instagram (intelligent_domestications), a photo of beef tips that she made for her dinner.
I also saw that Shirley had her crockpot recipe posted up on her blog too. I hope you will all stop by her Instagram and blog and check out her Crockpot Beef Tips and Gravy recipe.

Well, just by looking at that photo it gave me the idea to make beef strips and broccoli for dinner. I decided that I would just make mine on the stove.
Below you can see my Beef and Broccoli cooking on the stove. This is the easiest weeknight meal and everyone will love it.

It reminds me of a Chinese takeout dish that we often get when we order Chinese food.

I decided that I would make Instant Pot Rice as a side for the beef and broccoli. You can serve this dish with anything you like on the side.

EASY BEEF AND BROCCOLI

INGREDIENTS:
I package of beef strips
1 jar of beef gravy
1 small package of frozen broccoli
1 tablespoon olive oil
DIRECTIONS:
In a large skillet add to the pan olive oil and beef strips. Cook the meat until it is all the way cooked through and no more pink in meat. Next add in gravy and broccoli and cook them all together until broccoli is done and tender.
Meanwhile you can cook your rice on the stove or in the Instant Pot.

Hello friends. I've been on a kale kick lately, and I have been using this vegetable in many of the different dishes I make.
Today I'm sharing with you this easy to make kale and pasta recipe.

Kale and Pasta

This is a quick and easy recipe to make using kale.
Ingredients
- 4 cups kale, chopped
- 3 garlic cloves, chopped
- 1/4 teaspoon red pepper flakes
- 1 16 oz. box rotini pasta
- 3 tablespoons olive oil
- 1/2 cup water
- salt and pepper to taste
- to garnish grated cheese
Instructions
1. In a pot add olive oil, garlic, and red pepper flakes. Salute until garlic is golden brown. Add the kale, water, and mix everything together. Cook until kale has wilted down.2. Meanwhile cook the pasta as the directions call for on the back of the box. When pasta is finished cooking, drain the pasta into a colander. Add pasta to the pot of cooked kale. Mix everything together.3. Add pasta and grated cheese to each dish.

Hello everyone. Sorry, but I didn't have a chance to share this recipe with you until now. I hosted Thanksgiving at my house and to make things easy, I decided to make Crock Pot Mashed Potatoes. Have you ever made them before? Well these are so easy to make and in a few hours you can have them ready to eat.
You take the potatoes, and wash, peel, and cut them up into small pieces, and just add them to the crock pot.
Add chicken stock, butter, and chopped up garlic.
Set the crock pot on High for 3 to 4 hours and let them cook. When finished I added some milk and just mashed them up with a potato masher.
This is what they looked like when they were done.
This was so easy for me to make for a crowd of 9 people. I used a 5 pound bag of potatoes. We were able to have left overs for our guests and our selves.

NOTE: I did not have sour cream or Greek yogurt like the recipe called for and they still tasted great.
I am so happy I made the mashed potatoes this way, and everyone liked them. I liked that I was able to free up my stove for the other food I was cooking.

Hi friends. Now that fall is here I love entertaining with family and friends. One of my favorite things about fall is eating apple pie.
Recently while I was visiting with family, I made this apple pie and everyone loved it. All you need is a box of pie crusts and apple pie filling to make this easy and delicious pie.
Psst... I did not share my secret with anyone either! Lol!
Shown here are the simple steps to make this apple pie.
Semi Homemade Apple Pie
Ingredients:
1 can Duncan Hines Comstock More Fruit Apple Filling
1 box Pillsbury refrigerated pie crusts, softened as directed on box
1 egg
1 dash of milk
Directions:
Preheat oven to 425 degrees F. Unroll pie crusts and press crust into pie plate. Fill crust with 1 can of apple pie filling. Place pie crust on top of apple pie filling. Press down edges of pie crust. Lightly beat egg with a dash of milk. Brush egg mixture onto the edges and top of the pie. Place pie on baking sheet and bake 25 to 30 minutes or until crusts are golden brown and fruit is bubbling.
Done.
** You can use any pie filling you like such as blueberry, cherry, and peach.

Hi everyone. Do you ever get tired of making the same old recipes for dinner? Well in our family I like to make easy and healthy recipes that aren't too complicated to make. I found this recipe to make Tuna Burgers on Pinterest.
I made these for dinner recently with a salad on the side and my family loved them and I'd love to share it with you.
The mixture makes about five or six patties depending on how big you make them. Here you can see them in the frying pan. We had the burgers with a salad on the side but you could also serve them on a bun with lettuce and tomato or any fixing that you like.

* NOTE: For a little bit more flavor I added to the recipe Chesapeake Bay Style Seafood Seasoning and some dried parsley. You can add as many or whatever seasonings you like.

I love cooking vegetables as a side dish for our family for dinner. Today I'd love to share with you this easy recipe for Roasted Cauliflower.
ROASTED CAULIFLOWER
Ingredients:
1 head of cauliflower
4 tablespoons olive oil
salt and pepper to taste
Directions:
Preheat oven to 400 degrees F. Lightly spray with cooking spray (PAM) a large roasting pan. Cut cauliflower into small florets and place in a bowl. Add to the bowl olive oil, salt, pepper and mix everything together. Spread florets out onto the roasting pan and place in oven. Roast for 35 to 40 minutes until lightly browned. Use a fork to test when done.
Done!
This makes a great vegetable side dish for chicken, fish, steak or any pork dish. I hope I have inspired you to make this easy vegetable recipe.

POTATO FRITTATA RECIPE
SERVING SIZE: 2-3 people
INGREDIENTS:
olive oil - to coat pan
1 potato - peeled and cut into small cubes
5 eggs
splash of milk
1 tablespoon grated cheese
pepper to taste
DIRECTIONS:
Peel and cut potato into small cubes. Add to heated frying pan olive oil, potato and sauté until cooked through. Once potato is cooked through, whisk together eggs, milk, cheese, pepper and pour into pan and cook until eggs are solid about 10 minutes. Done.
You can serve this with toast or with a salad on the side. Enjoy!
Hi friends, this is such a busy time of year and I thought that I would share with you a dinner that can be made in minutes! Back in November of 2012 I shared with you this recipe and I'm sharing it with you again. I hope you enjoy it as this is a family favorite.
MEATLOAF MUFFINS
Ingredients:
1 envelope of Lipton Recipe Secrets Onion Soup Mix
2 lbs. of ground beef, pork and veal or just beef if you prefer
3/4 cup Italian bread crumbs
2 eggs
3/4 cup of water
1/3 cup of ketchup
Directions:
Preheat oven to 400 degrees. In a large bowl combine all the ingredients. Spray muffin tins with Pam (non-stick spray). With an ice cream scoop place meat in tins. Bake for 15-20 minutes. Makes about 24 mini meatloaf muffins.

CHICKEN SAUSAGE & PEPPERS RECIPE
Makes 4-6 Servings
INGREDIENTS:
6 Chicken Sausage, cut into small pieces about 1/2 inch
2 Peppers, any color, cleaned and cut into long strips6 Chicken Sausage, cut into small pieces about 1/2 inch
1 Onion, peeled and cut into long strips
2 Tablespoons Olive Oil
DIRECTIONS:
In a large pan saute peppers and onions in olive oil for about 5 to 10 minutes. Add chicken sausage and cook everything together for about 15 minutes until peppers are cooked soft.

Suggestion: Serve with Italian Bread

Hi friends, back in November of 2012, I shared with you this recipe for Oat Bran Pancakes. This recipe was given to me by our friend Ruby. I would love to share with you this healthy pancake recipe again.
OAT BRAN PANCAKES
Minutes to Prepare: 2
Number of Servings: 1
INGREDIENTS:
1 1/2 tablespoons of Rolled Oats (Quaker Oats)
1 egg (or egg white if you have cholesterol problems)
a dash of vanilla
Number of serving: Makes 1 large pancake or 3-4 smaller pancakes
DIRECTIONS:
Put oat bran in a bowl, add Greek yogurt, one egg and a dash of vanilla. Mix all the ingredients thoroughly and pour on to a non-stick pan that is sprayed with PAM.
Cook for 2-3 minutes on each side.
Note: Cut into strips and dip into nonfat flavored yogurt, you can use salmon fat free cream cheese or any flavored cream cheese instead of yogurt.
These pancakes will keep for at least a week in the refrigerator and wrap them in foil or cling wrap so that they do not dry out. The pancakes can also be put in the freezer.
For more flavor you could also add in a dash of vanilla and cinnamon.

I hope you enjoy these pancakes because they come out fluffy and moist!
