I have my Friday Favorites - June Edition:
1. Kitty Makes Buffalo Cauliflower Wings
I shared a recipe for Buffalo Cauliflower Wings on the blog last week. I'm so happy that my blog friend Kitty from Kitty's Kozy Kitchen made the buffalo cauliflower on the grill. What a great idea to grill the cauliflower. Thanks, Kitty for making the cauliflower recipe and I'm glad you liked it!

2. Book Reading
I discovered this book, Next Year in Havana by Chanel Cleeton, recommended by the blogger Preppy Empty Nester. After the death of her beloved grandmother, a Cuban-American woman travels to Havana, where she discovers the roots of her identity-and unearths a family secret hidden since the revolution.
I found this book to be an interesting read and I liked learning about Cuban history. Have you read any good books lately? 📚 I'd love to know.

3. Gardening
The photo on the left is some escarole and romaine lettuce that I picked from my garden. I made a few salads from the lettuce I have growing. We'll have a few more salads to enjoy this summer. The photo on the right is my zucchini growing and flowering. I planted a citronella plant and it's helping to keep away the mosquitoes. I also have chicken wire covering some of my plants to keep away the squirrels. The chicken wire is helping to keep the critters away! I just discovered the other day a green caterpillar eating my parsley plant. I took the caterpillar and parsley stem and put it in another area at the end of my garden. I make sure to check the gardens carefully when I water them each day.

4. Wegmans
I'm happy that a Wegmans opened up in our area. We like going to Wegmans to do our food shopping occasionally. It's always a treat going there and we've had some nice barbecues. Mr. JCL loves the beer and liquor isle.

5. Different Moods of Bosco
We enjoy taking photos of Bosco! He's just so cute and so lovable. Bosco likes taking car rides with us too. 🐶

6. Summer Drinks
We've been enjoying different drinks this summer. The blue drink is a Blue Lagoon and the red drink is a Vodka and Cranberry. Have you been making any fun drinks this summer? If you want some awesome drink ideas you can visit Andrea at Living on Cloud Nine.
7. New Sandals
I recently ordered new Birkenstock sandals online for my daughter. I was happy to get my sandals (the second pair on sale) from Famous Footwear. These sandals are so comfy and perfect for summer.

Lately, my daughter has discovered a lot of awesome recipes on TikTok as I discussed here. One of the recipes she wanted to make was Buffalo Cauliflower Wings.
Lately, my daughter has discovered a lot of awesome recipes on TikTok as I discussed here. One of the recipes she wanted to make was Buffalo Cauliflower Wings.
My daughter had her friend over one afternoon and they made the buffalo cauliflower together. I had a bite of one and it tasted absolutely delicious!

They also made a few cauliflower wings with barbecue sauce that also tasted good.
I liked the recipe so much that I decided to make them myself. These cauliflower wings are perfect for an appetizer, snack, or side.
I hope you try these and like them as much as we did.

Healthy cauliflower version of traditional buffalo wings
Prep Time: 30 minutes
Cook Time: 40 minutes
Total Time: 1 hr 10 minutes

INGREDIENTS:
- 12oz. cauliflower
- 3/4 cup whole wheat flour
- 2 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp pepper
- 1 tsp salt
- 1 cup plant milk
- buffalo sauce
INSTRUCTIONS:
- Start by cutting up your cauliflower into wing sized pieces.
- In a bowl, mix your flour, garlic powder, paprika, salt, pepper, & plant milk.
- Dip each cauliflower into the mixture and place it on a baking sheet.
- Bake at 450 degrees Fahrenheit for 20 minutes.
- After 20 minutes, take the wings out.
- Give the wings a couple of minutes to cool off, so that you don't burn yourself.
- Then dip each wing into buffalo sauce.
- Place the wings back on the baking sheet and bake for another 20 minutes.
- *Tip-they taste even more amazing if you serve them with some vegan ranch dressing.
NOTE: What we changed around in the recipe:
We used regular flour instead of whole wheat flour. For the milk, we used unflavored almond milk.
For the buffalo sauce we used Wing-Time Mild Buffalo Wing Sauce. For the barbecue sauce, we used Sweet Baby Ray's Honey Barbecue Sauce.

Let's Re-Grow Lettuce
Have you ever tried to re-grow lettuce? I didn't realize that you could do this but I discovered you can by visiting the blog Walking On Sunshine Recipes. Lois explains how to re-grow lettuce HERE.


I make salads every day and I thought that this would be a great idea to try.
I was so happy to see the romaine lettuce re-growing after a week.

The steps are easy to re-grow your own lettuce:
- Take romaine lettuce and cut off the end of the lettuce.
- Add water to a mason jar.
- Place the end of the lettuce in a mason jar.
- Change water every other day in the mason jar.
- Wait for lettuce to start re-growing in the middle of the lettuce.
- You can replant lettuce after 2 weeks of growing to a pot or garden.
