Bareburger Restaurant

August 19, 2022

We decided to go out to eat at Bareburger Restaurant before our food shopping trip to Trader Joe's.  It's been a long time since I've been out to eat at Bareburger.  We were surprised that they changed the food menu and they had more drinks on the menu since the last time we ate there.  My daughter had a margarita and my husband and I had a glass of Pabst Blue Ribbon beer as we don't like drinking craft beer.

I had a burger called Sweet Dreams that consisted of sweet potato, kale, wild rice, alfalfa, avocado, spinach, cucumber, red onion, and green goddess dressing, on a bun.  My burger was delicious tasting and I loved my burger.  My husband had a chicken burger wrapped in lettuce and my daughter had an impossible cheeseburger.  I'm sorry I forgot to take photos of their burgers, I guess I was too hungry.  LOL!

My Sweet Dreams Burger

We all shared french fries.  I like the presentation of the fries in that little pot.

We all shared a delicious order of fried pickle chips and dip.

I love this bear and the unique wall decor.

If you go to Bareburger during the week Monday through Thursday they have Happy Hour from 12 - 7 pm.

Have you ever eaten at Bareburger?

Trader Joe's Haul - August

August 15, 2022

It's been a while since I've been to Trader Joe's.  I'd love to share with you some of the items we bought on our recent shopping trip.

I was happy when I saw these small artichokes.  I've made instant pot stuffed artichokes we like and I made them again.  I love stuffed artichokes but it's a lot of work to make them but it's so worth it!

This watermelon facial mist is a new product that I'm loving this summer.  It cools your skin and I apply it before I put on my face cream.

This type of pasta was a first for us that we liked with freshly made tomato sauce.

I like this type of pasta with tomato sauce.

We like this whole wheat spaghetti with tomato sauce.

This vegan Tikka Masala dish is a favorite that my daughter likes to eat.

We like this salsa with chips.

This dip goes great with chips and vegetables.

We enjoy eating this vegan onion dip with chips.

Some of our favorite chips.

I like these peanut butter pretzels.

My daughter likes this tofu.

This buttermilk protein pancake mix is new to me.  I look forward to making pancakes with this mix, you just add water.

I love this sparkling lemonade and this pretty bottle it comes in.

We usually like TJ's salads but this time the salads did not have that much lettuce in them.  I had to add extra lettuce to these salads.  I don't think I will be buying these Trader Joe's salad kits anymore.

Reading Lately - July

August 9, 2022

Happy Tuesday everyone.  I've read some good books lately that I'd love to share with you.

The Seven Husbands of Evelyn Hugo by Taylor Jenkins Reid

Book Description:

Aging and reclusive Hollywood movie icon Evelyn Hugo is finally ready to tell the truth about her glamorous and scandalous life. But when she chooses unknown magazine reporter Monique Grant for the job, no one is more astounded than Monique herself. Why her? Why now?

Monique is not exactly on top of the world. Her husband has left her, and her professional life is going nowhere. Regardless of why Evelyn has selected her to write her biography, Monique is determined to use this opportunity to jumpstart her career.

Summoned to Evelyn’s luxurious apartment, Monique listens in fascination as the actress tells her story. From making her way to Los Angeles in the 1950s to her decision to leave show business in the ‘80s, and, of course, the seven husbands along the way, Evelyn unspools a tale of ruthless ambition, unexpected friendship, and a great forbidden love. Monique begins to feel a very real connection to the legendary star, but as Evelyn’s story near its conclusion, it becomes clear that her life intersects with Monique’s own in tragic and irreversible ways.

My Thoughts on the Book:

I like reading books by this author and I've read Daisy Jones & The Six and Malibu Rising.  I couldn't wait to read her next book The Seven Husbands of Evelyn Hugo.  I loved this book about Hollywood star Evelyn Hugo and all of her seven husbands and her rise to fame.  It's a good summer read which I'm sure you'll enjoy.  Taylor Jenkins Reid has a new book coming out soon which I can't wait to read called Carrie Soto is Back.

The Newcomer by Mary Kay Andrews

Book Description:

In trouble and on the run...

After she discovers her sister Tanya dead on the floor of her fashionable New York City townhouse, Letty Carnahan is certain she knows who did it: Tanya’s ex; sleazy real estate entrepreneur Evan Wingfield. Even in the grip of grief and panic Letty heeds her late sister’s warnings: “If anything bad happens to me—it’s Evan. Promise me you’ll take Maya and run. Promise me.”

With a trunkful of emotional baggage...

So Letty grabs her sister’s Mercedes and hits the road with her wailing four-year-old niece Maya. Letty is determined to out-run Evan and the law, but run to where? Tanya, a woman with a past shrouded in secrets, left behind a “go-bag” of cash and a big honking diamond ring—but only one clue: a faded magazine story about a sleepy mom-and-pop motel in a Florida beach town with the improbable name of Treasure Island. She sheds her old life and checks into an uncertain future at The Murmuring Surf Motel.

The No Vacancy sign is flashing & the sharks are circling...

And that’s the good news. Because The Surf, as the regulars call it, is the winter home of a close-knit flock of retirees and snowbirds who regard this odd-duck newcomer with suspicion and down-right hostility. As Letty settles into the motel’s former storage room, she tries to heal Maya’s heartache and unravel the key to her sister’s shady past, all while dodging the attention of the owner’s dangerously attractive son Joe, who just happens to be a local police detective. Can Letty find romance as well as a room at the inn—or will Joe betray her secrets and put her behind bars? With danger closing in, it’s a race to find the truth and right the wrongs of the past.

My Thoughts on the Book:

This is the first book I've read by this author.  The book is a mixture of humor, romance, and mystery.  I found myself laughing at times and I enjoyed reading this book.

Summer Island by Kristin Hannah

Book Description:

Years ago, Nora Bridge walked out on her marriage and left her daughters behind. She has since become a famous radio talk-show host and newspaper columnist beloved for her moral advice. Her youngest daughter, Ruby, is a struggling comedienne who uses her famous mother as fuel for her bitter, cynical humor. When the tabloids unearth a scandalous secret from Nora's past, their estrangement suddenly becomes dramatic: Nora is injured in an accident and a glossy magazine offers Ruby a fortune to write a tell-all about her mother. Under false pretenses, Ruby returns home to take care of the woman she hasn't spoken to for almost a decade.

Nora insists they retreat to Summer Island in the San Juans, to the lovely old house on the water where Ruby grew up, a place filled with childhood memories of love and joy and belonging. There Ruby is also reunited with her first love and his brother. Once, the three of them had been best friends, inseparable. Until the summer that Nora had left and everyone's hearts had been broken. . . .

What began as an expose evolves, as Ruby writes, into an exploration of her family's past. Nora is not the woman Ruby has hated all these years. Witty, wise, and vulnerable, she is desperate to reconcile with her daughter. As the magazine deadline draws near and Ruby finishes what has begun to seem to her an act of brutal betrayal, she is forced to grow up and at last to look at her mother--and herself--through the eyes of a woman. And she must, finally, allow herself to love.

My Thoughts on the Book:

I love reading books by the author Kristen Hannah.  I enjoyed reading The Nightingale and The Four Winds by this author.  I found this book to be just ok and it's about family, love, and forgiveness.

Binge Watching TV Shows

August 8, 2022

Hi Friends!  I'm joining Joanne from My Slices of Life for their monthly link up.  The theme this month is Binge Watching TV Shows.

Stranger Things-Season 4.  I've enjoyed watching Stranger Things each season since it first started.  This show seems to get better and better each time I watch each season.  It takes place during the 1980s in Indiana where a group of kids witness mysteries, the supernatural, and secret government experiments.  There is a lot of action and some violence throughout the show.  I felt scared and on edge but I couldn't wait to see what would happen to each character in the show. We had to watch this season in two volumes.  If you like sci-fi horror shows than you will love this one.

Ted Lasso - Season 1 and 2
This is about an American football coach who is hired to manage a British soccer team.  Ted lacks knowledge in soccer but he makes up for it in his determination and optimism.  I really enjoyed this show and I'm looking forward to watching the next season.

Only Murders in the Building - Season 1 and 2
It's about three upper west side neighbors starring Steve Martin, Martin Short, and Selina Gomez who all share an obsession of true crime.  When a neighbor dies in the building they are all determined to solve the mystery.  I love this show and I look forward to watching it each week.

Loot - Season 1
We've seen a few episodes of this series on Apple TV and we like it so far.  Maya Rudolph plays Molly who is a divorced billionaire who must figure out what to do with her $87 billion settlement.  Maya Rudolph's character is great and you get a glimpse into how the rich live.

Better Call Saul - Season 6
This is the prequel to Breaking Bad which follows a small time attorney Jimmy McGill as he transforms into morally challenged Saul Goodman.  I like this show but it's violent and I usually feel on edge when I'm watching this show.  We have only a few more episodes left of this show before it ends.

I'm still in the middle of watching The Marvelous Mrs. Maisel Season 4.  I love watching this show and it is filmed in New York City.

What shows are you watching and do you have any recommendations?

If you would like to join in next month, below is the topics.

Keto Zucchini Muffins

August 1, 2022

Happy August friends!
We like eating zucchini during the summer months and I found this recipe to make Keto Zucchini Bread & Muffins.  These muffins are low carb and I hope you enjoy these muffins as much as we did.

In a large bowl, I mixed all of the ingredients.

I added the batter into a muffin tin with cooking spray.

What You'll Need:

KETO ZUCCHINI MUFFINS
Recipe can be found at Low Carb with Jennifer

INGREDIENTS:

2 cups almond flour
1/2 teaspoon kosher salt
1/2 teaspoon ground cinnamon
1/2 cup granular sweetener - I used Swerve
1 teaspoon baking soda
2 large eggs, beaten
1/4 cup melted butter
1 1/2 cups grated zucchini with peel

EQUIPMENT:

9 x 5 inch loaf pan or 12 cup muffin tin

DIRECTIONS:

Preheat the oven to 350F.  Grease a 9 x 5 loaf pan with butter or cooking spray.  In a large bowl, combine the almond flour, salt, cinnamon, swerve, and baking soda.  Wrap the grated zucchini in a kitchen towel and squeeze out as much liquid as you can.  Discard the liquid and add zucchini to the dry ingredients followed by the eggs and melted butter.  Stir batter until combined.  (Refer to Jennifer's Tips)  Pour batter into greased loaf pan and bake in the 350F oven for 60 minutes or until a toothpick comes out clean.  Let cool before serving.  Slice into 12 slices.  See notes for freezing, making muffins, and for a savory bread.

MUFFINS:

Divide batter evenly into a 12-cup muffin tin.  Bake in the 350F oven for 18-20 minutes or until a toothpick comes out clean.
