I have another simple and easy vegetable recipe I'd love to share with you.
You might remember when I made the Pizza Stuffed Mushroom recipe that I shared with you last October. The pizza stuffed mushrooms came out great tasting and I found the recipe at The Modern Nonna. I love her easy recipes and I decided to make her Zucchini Pizza Bites. I decided to cut the zucchini diagonally and make them into zucchini pizza.
This zucchini pizza recipe was a hit with my husband and I. I've made them as a side to go with our chicken and fish for dinner.
I took the zucchini and cut them diagonally into somewhat small pieces. I put them on a large sheet pan covered with tin foil and cooking spray.
I added some tomato sauce on top of the zucchini.
I next added mozzarella cheese on top of the tomato sauce. Then I baked them in the oven for about 15 minutes at 450 F.
I hope you enjoy the zucchini pizza as much as my husband and I.
ZUCCHINI PIZZA

INGREDIENTS:
- 2 medium zucchini
- pizza sauce of choice
- Parmesan cheese (any cheese works)
- dry oregano
DIRECTIONS:
- Pre-heat your oven to a high setting (450 F). If your oven doesn't go that high, just choose the highest setting that you can but you need to make them longer.
- Cut the zucchini into 1/4 inch circles or even diagonally too.
- Add a teaspoon of your favorite pizza sauce in each one, a teaspoon of parmesan cheese or any cheese of choice, and some dry oregano is optional.
- Bake at 450 F for 10 minutes and I let mine get golden on BROIL for 1-2 minutes but that's optional.
- Garnish with basil or parsley.

Please note: You can use any cheese you love (vegan, goat, Boursin, feta, parmesan, etc.) it will be delicious with any cheese option so feel free to experiment. You can also use mini pepperonis but it's up to you. I love Rao's pizza sauce but you can use any.
What I changed:
I cut the zucchini diagonally. I added the tomato sauce and mozzarella cheese on top of the zucchini. I cooked the zucchini in the oven for about 12-15 minutes.

I'm constantly on the lookout for new recipes to try out for our weeknight meals. I noticed back in February a crockpot recipe at Jenna's blog The Painted Apron. Jenna made a crockpot meal for chicken parmigiana sliders. I wanted to make the sliders because they looked so good. I didn't have any small buns so I decided to make a similar meal but with elbow macaroni instead.
I added into the crockpot a slow cooker liner. It's the first time I've used slow cooker liners. It made the clean-up so easy. You just throw out the slow cooker liner afterward and the pot stays clean. I will be using these liners from now on. I found my liners at the Dollar Tree store. You can also find similar liners on Amazon.
The process was so easy to make this crockpot chicken. It's an easy one-dump meal in the crockpot. Here is Jenna's recipe for the chicken sliders. Thanks, Jenna for sharing your crockpot chicken sliders recipe.
Below I will share my recipe for the crockpot chicken and pasta.
CROCKPOT CHICKEN AND PASTA
INGREDIENTS:
- 6 to 8 chicken cutlets or tenders
- 1 jar of prepared marinara sauce
- 1 tsp. minced garlic
- 1 tsp. minced onion
- Italian seasoning
- 1 cup of elbow macaroni
Spray crockpot with cooking spray or add a slow cooker liner. Add the chicken to the pot, add seasoning, and marinara sauce. Cook everything on a low setting for 6 hours. About a half-hour before cooking is done add the elbow macaroni. Finish cooking until pasta is done and cooked.
NOTE:
You can also add at the end shredded mozzarella. I didn't have any mozzarella otherwise I would have added that to the crockpot.

Hello blog friends. I set a crochet project goal to make a sweater. This is the first time crocheting a sweater and I found a free simple crochet pattern on Pinterest. I made an oversized sweater using this pattern.
I chose one color of yarn since it's the first time I've crocheted a sweater. I tried to buy dark-colored yarn but the bins were empty at Michaels. I chose this taupe-colored yarn thinking this will go with everything. I can wear this sweater with black pants or jeans.
I'm happy I challenged myself and crocheted a sweater. I think the sweater came out pretty good for my first crocheted sweater.
This is what the sweater looks like on me.
YARN: 7 Skeins of yarn - Charisma Loops & Threads - Color Taupe
CROCHET HOOK: L/8.0 mm hook

NOTE: Changes to the pattern: The pattern called for 5 skeins of yarn but I had to use 7 skeins of yarn to complete this sweater. I used one color of yarn to make this sweater. I had to make changes to the pattern to fit me better. The size small was too big for me, so I adjusted the pattern smaller.
Adjustment:
Front: Chain 50
Row 1 = dc in 3rd ch from hook - 48 dc
Row 2 = ch 2 - turn - dc in ea. st. across = 48
Back: Chain 50
Row 1 = dc in 3rd ch from hook - 48 dc
Row 2 = ch 2 - turn - dc in ea. st. across = 48
To sew the sweater together I followed the measurements for a size small.

How to Stop Time by Matt Haig
This is the first time I've read a book by this author. I was given this book for Christmas. The main character Tom Hazard looks 41 years old but has a rare condition and is centuries old. Tom has to move around every 8 years and is tired of moving around and wants an ordinary life. We are taken back and forth in time and have learned about all the people and places Tom has experienced over his long life. Then the story takes us to present-day life for Tom where it involves mystery and a love story. Tom is finally happy at the end of his life. I thought the book had a slow start but then the story picked up and I enjoyed reading this book.
I've noticed on the New York Times bestsellers list is another book by this author called the Midnight Library. I'd love to add this to my book list.
The Queen of Paris - A Novel of Coco Chanel by Pamela Binnings Ewen
This is another new to me author and book that I received for Christmas. I loved reading this book and I couldn't put it down. This is a historical fiction book about Coco Chanel. I think you'll enjoy learning more about the life of fashion designer Coco Chanel.
I recently shared about my book goals and all of the books I want to read. I am going off that book list and reading The Lincoln Highway.

I just started reading this book last week. This book was recommended by Jenna from the Today show who has a book club. Mr. JCL read this book and also recommended I read it. I'm reading it on the Kindle app on my iPad.

I can't believe it's been a while since my last Costco Finds blog post. I'd love to show you all the items I found on our shopping trip last weekend.
It's been a while since I've been to Costco since I also belong to BJ's, shop at Trader Joe's, and shop at all of our local grocery stores for food. This happened to be a large shopping haul. We bought other items besides food.
I follow on Instagram @costcohotfinds and after seeing these jogger pants they shared I had to have them.
I bought two pairs of these joggers in size Medium at Costco but online. They are still on sale for $12.99 a pair. These joggers have got to be my favorite pants for wearing around the house. These joggers are comfy and come in three colors.
I have to admit that I have a lot of winter boots. I have two pairs of Uggs, black snow boots from Costco, and I couldn't resist these LL Bean dupe boots. They come in two colors, are well made, and cost about $27.00. These will be perfect for our snowy and rainy days in March.
I bought this ten-pack of athletic socks to share with D.
We use these frozen berries in the protein shakes we make for breakfast.
This is a new to me food product. I thought this cauliflower stir-fry rice would be great for a side with our dinner.
I shared this crockpot beef short ribs recipe recently and they were a big hit in this house. Well, Linda from Life and Linda suggested I try the boneless short ribs from Costco. I bought the package of meat and I divided it up and put it into freezer paper for another time. I can't wait to make the short ribs again.
Since lent is starting this week I bought this frozen salmon to make for our dinners.
We like these stuffed peppers and we can stretch it out for two dinners.
We never get tired of this Ceasar salad kit. We can eat it at least two to three times.
This chicken quesadilla is so delicious and easy to heat up in a skillet. The kit comes with salsa, guacamole, and sour cream.
My hubby likes taking these krill oil pills.
We like taking vitamin D3 pills too.
I grabbed this cleaning spray as it hasn't been in Costco for a long time. I love using this Mrs. Meyers cleaning spray throughout my house.
We use this protein powder for our daily shakes.
This is another new to me coffee and we both like it. The area to grind the coffee was free and it grinds so fast in their machines.
