Hello blog friends. I hope you all enjoyed celebrating the long weekend and Memorial Day. I've been away on vacation for two weeks and it feels great to be back home. Please bear with me as I am going to try and catch up with my blog posts and blogging.
We had a quick visit to Providence, Rhode Island again at the end of April. My daughter sings in her college choir at Providence College and they were going to have their last spring concert.
We were happy to stay in the Hotel Providence as they are a dog-friendly hotel. We like that since we can bring Bosco with us for the weekend. Our usual hotel we stay in, the Dean Hotel was all booked up. I did a blog post back in March HERE about the hotel and Providence College alumni and family weekend we attended.
When we arrived at our hotel it wasn't ready yet so we all took a quick walk around the area. Some of you may remember the last time we visited there was snow on the ground and cold outside.
Providence is so pretty to visit in the spring as the trees are just starting to bud and open.
When we visit Rhode Island, Bosco is so good and likes his car rides. He LOVES his visits to see his sister.
My daughter's college friends were so happy to spend time with Bosco while our daughter had her concert.
Below I was able to get a photo of my daughter and the singers in St. Dominic's Chapel. It was such a lovely concert and we were so happy to hear everyone sing.
We had dinner after the concert at an awesome Greek restaurant called Andreas located on Thayer Street, right near Brown University.
The next day we picked up my daughter at school to go to breakfast. Our daughter lived in the building seen below and had great views of the city of Providence.
I walked around the campus with Bosco taking photos of the buildings.
We had breakfast at a cute cafe that is in a bicycle shop.
This coffee shop sells a fancy breakfast and Nitro cold brew coffee. They also have a cart that goes around to the nearby colleges selling Nitro brew coffee.
Some of you may remember seeing the photo below on my Instagram @brklynhousewife.
We all sat outside at a table since we had Bosco with us. The coffee, bagel, and breakfast sandwiches were so good.
You can see below photos inside the coffee shop and many bicycles hanging on the wall.
After we dropped off my daughter she gave us some of her things from her dorm room to bring back home with us.
P.S. My daughter has everything all moved out of her dorm room and back home.

I can't believe that my daughter has finished her freshman year at college. I feel a little sad that we won't be going back to Providence, Rhode Island until the end of August. We all enjoy our visits and we are looking forward to the return in the fall.
In the meantime, I am happy to have my college girl home for the summer! 😎

This will be our first time not spending it with you. We will miss you but we know you will have a fun time celebrating with your friends.
Time has flown by so fast and we had some really fun times with you. You loved our family vacations and getting your hair braided.

You are such a beautiful daughter and we love you very much.

Hello friends. I hope you all are enjoying the week.
I love spring and flowers and the perfect way I like to get inspiration for gardening is to visit the Macy's Flower Show.
I did not realize it but the last time I visited the show was in 2016.
It was a beautiful spring day and my husband and I decided to head into the city to see all the spring flowers showcased at Macy's.
Each year Macy's welcomes spring with the flower show and this years theme was space age "Journey to Paradisios" - Operation: Inspriation.
The whole first floor was decorated with so many assorted flowers and floral arrangements.
Below you can see this huge floral arrangement with a space ship at the top.
The displays featured more than 5,000 different kinds of plants, trees, and flower species.
I love the gorgeous orchids and hydrangea flowers shown below.
The flower show began on March 25th and the displays last for two weeks until April 7, 2019.

While walking along if you looked up could see more flowers at the tops of the displays.
I was so amazed at the beautiful mannequins and the pretty futuristic dresses.
Macy's unveiled the floral displays complete with floating planets, rocket ships, extraterrestrial looking plants, and cute aliens.
The Macy's Flower Show is free and if you love flowers as I do, then it's a fun way to celebrate spring.

Hello blog friends. Yay! I'm so happy it's Friday and the beginning of May.
I had a nice week and I'm really enjoying my spring walks.
Today I'm sharing some of my Friday Favorites.
1. Dollar Tree
I was in the Dollar Tree store recently and they have such a nice selection of gardening items. While I was there I bought some plant labels, a cute welcome rock, and a wall hanging. If you have time check out all of the gardening items. They also have the cutest items to make a Fairy garden.
2. Spring Flowers
While I am on my walks with my dog Bosco I see so many beautiful spring flowers.
Some of you might have recognized some of these flowers on my Instagram @brklynhousewife.
3. Shoe Shopping
I was shopping in the Famous Footwear store recently and I spotted these Birkenstock sandals. The price was just too good to pass. My daughter was so excited that I bought them for her. Her and her friends call them Berkies. LOL.
4. Easter Eggs
Last Sunday many celebrated Greek Easter and my neighbor gifted us with three red Easter eggs she made for us. It was so sweet that she thought of us and even made one for our college girl.
5. Olivia's Romantic Home
I am obsessed with watching Olivia's Romantic Home craft videos on YouTube. Olivia loves Dollar Tree and makes so many crafts with items found at the DT store. I also follow her on Instagram.
Below she posted up this cute watering can she painted and added DT flowers.
I also discovered Olivia's Romantic Home from the blogger Penny's Vintage Home. If you like to make easy crafts then I suggest you visit Olivia's blog and her YouTube videos.
I love her shabby chic style and I bet you will too.

I am on a Cauliflower kick. I posted a recipe back in April for Roasted Cauliflower and Pasta that is so easy to make and it tastes delicious.
Well, in our house we all love eating salads in the summer or any time of the year for that matter.

I have this really delicious salad to share with you. It's a Cauliflower Salad.
I enjoyed eating this cauliflower salad with a small lettuce salad on the side for my lunch.
OR...
You could even serve this salad as a side dish with your fish, chicken, or steak dinner.
This cauliflower salad is a great change from having macaroni salad, coleslaw, or potato salad. The secret to this salad is that there are no potatoes in it, so it makes it lighter and a little healthier to eat.

This recipe calls for six slices of bacon. You can make baked bacon using my easy recipe here.
I hope you all enjoy this salad as much as my family does. You'll want to make this a new side dish for your lunch or main meal.
You can even double this recipe for the salad if you are hosting or going to a big party.

CAULIFLOWER SALAD
INGREDIENTS:
1 bag of frozen riced cauliflower - cooked and cooled
1/2 cup shredded cheddar cheese
1/3 cup mayonnaise
1/4 cup red onion - chopped
6 slices bacon - for baked bacon (See Recipe) - diced
2 hard-boiled eggs - cooled, peeled, and diced
1 teaspoon mustard
1/4 teaspoon salt
1/4 teaspoon pepper
DIRECTIONS:
Add cooked and cooled riced cauliflower to a large mixing bowl. Fry or bake 6 slices of bacon, for baked bacon (see recipe at the above link in the recipe) let cool and cut up into small pieces. Add all the remaining ingredients to the bowl of cauliflower. Stir well to combine.
Done!
