The weekend is coming and I wanted to share with you this easy and healthy recipe for Baked Eggplant Parmesan. When I made this dish for my family they loved it and now you can make it too!

Baked Eggplant Parmesan
Ingredients:
1 medium eggplant - sliced
2 eggs
2 tablespoons parmesan cheese
1 cup italian breadcrumbs
1 1/2 cups tomato sauce (or one 14-ounce jar)
1 cup mozzarella cheese
Instructions:
Preheat oven to 425 degrees. Spray 2 baking sheets with cooking spray (such as PAM). Slice eggplant (with skin on) into 1/4 inch slices. Place eggplant in a bowl, toss with salt and let sit for 10 minutes. Lightly pat eggplant dry. In shallow bowl mix together breadcrumbs, parmesan cheese, and add a dash of salt and pepper. In another shallow bowl beat the eggs until frothy. Dip eggplant in eggs and then into the breadcrumb mixture and coat both sides of eggplant and place on baking sheets. Bake for 20 minutes, flipping slices over after 10 minutes. Place a small amount of tomato sauce on the bottom of a 9 x 13 inch baking dish. Line the dish with eggplant slices slightly overlapping and top with remaining sauce. Sprinkle with shredded mozzarella cheese. Bake for 15 minutes.

Happy Fall everyone! Sunday is the first day of Fall and I decided to show you the mini pumpkins that I crocheted. I made these last year to decorate my mantel and they were so fast and easy to make. You all know how much I love fast and easy patterns to crochet.

The pattern to make these mini pumpkins is from Sarah at Repeat Crafter Me. I also plan to crochet more of them and I want to make larger pumpkins using gold and white yarn that I have.

Friday was my husband's birthday and we celebrated it by having dinner at dell'anima which means "of the soul" in Italian. The restaurant is located in the heart of New York City's West Village. We drove in by car and this is the shot I got of us driving on the Brooklyn Bridge.

On the dessert menu it had a dish called Fruitti Di Bosco Trifle, which we all thought was funny, since our dogs name is Bosco. It is the second dessert listed on the menu located on the top left.

Hello everyone, I just finished crocheting this dishcloth from the 52 Weeks of Dishcloths that Jill from Being Spiffy is hosting.
The pattern for the dishcloth is HERE. This chevron dishcloth is from Week 19 of the 52 Weeks of Dishcloths. I had fun crocheting this and the pattern isn't too difficult to make.
The pattern has increase and decrease in it to form this pretty chevron pattern.
The yarn I used to make this dishcloth is from Lion Brand Yarn, kitchen cotton in the color 174 Olive. How about making this fast and pretty dishcloth?

Hi everyone, I hope you all enjoyed the weekend. My mom came for a visit recently and she brought with her twice baked potatoes for our dinner.
These potatoes are really delicious and a family favorite. I would love to share with you her recipe for twice baked potatoes.
This recipe for twice baked potatoes is also great to serve for any holiday.
This Twice Baked Potato tastes so delicious and we like to serve it with steak or chicken. We had the potatoes with grilled skirt steak, vegetables, and a salad.
If you have left over potato filling you can bake it in a dish like the one shown below.
Twice Backed Potato Recipe
Pick 4 good size baking potatoes and wash skins thoroughly. Pierce skins with a sharp knife. Bake for approximately for 45 to 50 minutes at 375 degrees F.
Remove potatoes from oven and let cool for 10 minutes. Slice top off potatoes and remove contents of potato. Put in bowl with 1/2 - 3/4 cup warm milk, add 1/2 cup sour cream, 1/2 stick of melted butter, add 1/2 cup parmesan cheese and mix well in mixer and return potato mixture to potato skins and add a dot of butter on potato and sprinkle parmesan cheese on top. You could also add a slice of cheddar cheese on top of potatoes.
Return to oven and bake approximately 30 minutes at 350 degrees F or until brown on top.

Hi everyone, I found this cute pattern to make a soap cozy on Pinterest and I thought that I would share it with you too. If you like simple projects to crochet than this is the one for you. This would make a great gift for the holidays too.
You just put the soap inside the cozy and use it in the shower or bath and I used L'Occitane soap, which I love!
You can use cotton yarn to make this crochet soap cozy. I used the left over yarn from the dishcloths that I have been making. The cotton yarn is Sugar n' Cream and the color is Peace for the cozy that is red, yellow, and green. The cotton yarn is Sugar n' Cream and the color is Lime Stripes for the cozy that is light green and white.
To make this soap cozy the pattern is HERE. I hope that I have inspired you to make this little project and it is so fast and easy to crochet. Have fun with this and let me know what you think.
