I love making chicken cutlets for dinner and making simple meals during the week. I have this super easy baked chicken recipe to share with you.
In my family we love how delicious this baked chicken tastes and this recipe is so simple. Marinating the chicken is what makes this chicken dish taste so good.
I usually buy my organic chicken from Costco. The chicken comes in about three packages and the other two packages I usually freeze for another time.

The cutlets are marinated and then coated in seasoned bread crumbs. I usually use Ken's Steak House Italian with Extra Virgin Olive Oil Dressing & Marinade. When I use bread crumbs I like to use 4C Seasoned Bread Crumbs.
This dish is so easy to assemble and it only takes about a half hour to bake. This method of cooking and baking the chicken is a lot healthier than frying them.

I usually serve this with a vegetable such as broccoli or spinach and brown rice. We always have a salad to go along with our meal every night.

Easy Baked Chicken

This is an easy and delicious baked chicken recipe marinated in Italian dressing.
Ingredients
- 4-6 chicken cutlets
- 1/2 cup Italian dressing
- 2 cups Italian bread crumbs
- 2 tablespoons grated cheese
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- to coat dish olive oil
Instructions
Preheat oven to 375 degrees Fahrenheit. Using any Italian dressing that you like, marinate chicken for a few hours. In a large dish add bread crumbs, cheese, salt, pepper, and mix it all together. Take chicken cutlets and coat with bread crumb mixture. Add olive oil to coat a large baking pan and add breaded cutlets. Bake in oven on one side for 15 minutes and then turn over and bake for another 15 minutes.
Done. Enjoy!

Bags of our things to Donate |
Well, I have been so busy lately cleaning out and organizing everything in each of the rooms in my house. We have been in our house for many years. When you are living in a house for 23 years you just seem to accumulate A LOT OF STUFF!!
I hate throwing away something that is in good condition in the trash when I know I can donate it to someone else to enjoy.
I have been organizing and doing this on a daily basis now for the past few years. I have lost track of how many bags I have donated but it's well over 50 bags.
Where do I bring everything that I'm donating?
I like to bring everything to the Salvation Army and to my church.
If it's clothes and shoes that I'm donating then it's to a church that I call up and they will drive to my house and pick up all the bags. This church will then give the clothing to people that are in need that live in that area.
We also have a clothing drive held twice a year at my church that I love to donate gently used clothing, shoes, and coats to.
What items do I donate?
This past Christmas I donated to my church two bags of Christmas decorations that I did not need anymore. I brought them to the food pantry that is held at my church each week. I usually put all of the items on a large table and then people can come and just choose something that they would like to use.
I also gave away items like a new shower liner, makeup bags, tote bags, lamps, toys, and so much more to the Salvation Army in our neighborhood.
I love that I have all of these resources for donating items from my house. It makes me happy to know that I am donating and giving things to other people to use and enjoy. Meanwhile, I am cleaning out my house and organizing everything.

Hello Friends. I hope you're having a good week. Does it feel like spring weather where you live?
Well, in my neck of the woods the weather for March and April have been really crazy!
The month of March was really cold and we had a few really bad Nor'easters. It's April now and we've already had a few snow storms with many inches of snow. We were luckly that the snow melted quickly from the last storm we had.

I usually meet up once a month with friends in Union Square, New York City. I really look forward to this meet up and last week the weather was agreeable. We all decided to meet up, yay!

I decided to take a few photos to share with you since the weather was nice that morning when I arrived at Union Square.

You can see that some of the trees are just starting to bud and will have flowers and green leaves soon.

I love that the bushes and plants are green. Soon there will be leaves on these trees and you won't be able to see the buildings as clearly as now.

The sky was still dark and cloudy, but you can see behind the fence the statue and the buildings.

I was so happy to see the pretty spring flowers and pansies in the planters.

The flowers below will be blooming soon with tulips and daffadils. You can even see the pansies are starting to bloom. I like how green everything looks.

I will be really happy once it feels like warm spring weather here. I can't wait to not have to wear a scarf and heavy coat anymore. You can even see how green the grass looks.

There are many statues scattered throughout Union Square Park. There is even a small play ground for children to play in. (No photo).

Below, if you look you can see the brown building in the middle and that is Barnes & Noble. This bookstore is one of my favorite places to visit.

On this side of the street you can see all of the citibikes parked along the street for people to ride around the city. I have NOT done that as I would not feel comfortable riding a bike in New York City!

Now we are inside of Barnes & Noble. I love browsing and looking at all of the many books on the shelves. I enjoy reading fiction books and I really like looking at the huge assortment of magazines.
Next I went up to meet my friends in the Starbucks cafe. We usually look at magazines, knit and crochet at our leisure, while drinking our Starbucks coffee.

Once I left the book store, I decided to do a little shopping and then I took some more photos of the flowers in the Farmers Market. Have you ever been there? It's such a nice market and they have all kinds of specialty foods, breads, jellies, donuts, fruits, and vegetables.
They have such a huge variety of spring flowers now. If you look closely it had been raining outside and the ground was full of puddles.

I really enjoyed looking at the colorful pansies and daffadils. Spring flowers are the perfect way to cheer you up on a cold and dreary day!

Look more plants. Below are some really cute cactus plants. I really liked them but at $15 dollars I thought that I could make my own for a lot less money.
I can't wait to visit a local home improvement store to purchase all of my spring flowers and vegetables. I am really looking forward to some gardening in my yard. Hopefully that will be real soon.

Pasta and Meatballs |
Today I am here to share with you another Instant Pot recipe. Yes, you can make pasta and meatballs in the Instant Pot in four to six minutes.
I looked and searched for some recipes to make Instant Pot pasta and meatballs on YouTube and some blogs. I was so happy when I saw a recipe for this from the blog The Bearded Hiker and they shared the recipe at our Cooking and Crafting with J & J Link Up. I was really amazed that it only took a few minutes to make pasta and meatballs in the Instant Pot, and I knew that I had to try this out.
I made mine in six minutes and the pasta was good, but the pasta was a little soft. The next time I made it, I cooked it for five minutes and I liked the pasta at this amount of time better.

Instant Pot |
I just love that this cooks so fast and that this meal can be ready to eat in minutes. I always seem to be in such a rush to get food on the table during the week. Using the Instant Pot is the perfect solution for me.
I am so used to using a crockpot and slow cooking my food. I was so upset when both of my crockpots didn't work, but not anymore!
If you do not have an Instant Pot and like to cook food fast then I think you will love it as much as I do. This is a great way to cook your food if you are in a rush or hurry to get food on the table. You can make so many things in this pot and this pasta and meatballs dish will be regular on my menu for dinner.
