I have my Friday Favorites - April Edition:
I was so happy to have my second vaccine shot done at the beginning of April. I had a sore arm with my first shot, and the second shot I was tired the next day and my arm hurt. I'm glad to be fully vaccinated now and that the restrictions have eased up a bit here. I look forward to getting back to a more normal life.
We're happy that this weekend our daughter will be coming home for a visit. It's the first time she will be home since she left to go back to college in January. We'll be celebrating her 21st birthday!
I'm happy I read two books this month. I bought both books on a shopping trip to BJ's and they were a good price. This is the first time I'm reading books by this author. Both of these books take place in Nantucket, Massachusetts, where the author lives. It makes me want to take a trip to Nantucket as I've never been there and it's on my bucket list. These books make great beach reads and a gift idea for Mother's Day. Have you read these books?
I love finding new people to follow on Instagram. I discovered @brunchwithbabs. She has a fun personality with lots of recipes, and cooking tips.
I was happy when I discovered @low.carb.love as she has a lot of Keto and low carb recipes she shares. The recipes are all healthy and easy to make. Below is a photo of spaghetti squash and meat sauce she made for dinner.
I was so impressed with this sandwich that Ping from @mynomfictionlife made. The sandwich is made with noodles, egg, ham, and cheese on a cauliflower sandwich thin.
I'm happy to have clean earrings. I cleaned them in warm soapy water and let them soak for a while. I rinsed the earrings with clean water and put them on a paper towel to dry. My earrings look so bright and shiny now.
My husband and I enjoyed eating our Girl Scout cookies from my daughter. The cookies were so good but I'm glad we finally finished eating them. I'm trying to be good about eating sweets.
I was so happy when my husband made us for breakfast eggs, toast, and avocado slices.
We have a favorite Italian cafe in our neighborhood that makes the best sandwiches. We shared for lunch a broccoli rabe and chicken sandwich that tasted so good.
We recently had a take-out dinner from a local place called Burger Fi that we enjoyed for the first time. We had a hamburger, chicken sandwich, a hotdog with sauerkraut, and onion rings. We had a fun time indulging in this comfort food.
Bosco and I have been enjoying our spring walks. It's nice to see the grass growing and warmer temperatures.
You can see how Bosco and I enjoyed sitting out in the sun the other day. It was so nice to sit in the yard and enjoy the 80-degree weather. I look forward to more days like this so I can do my gardening and planting for May.

1. Sweet or Savory - I picked Savory because I love food that is full of flavor and delicious tasting like Italian food. You might remember my slow cooker lasagna recipe I posted a while ago.
2. Breakfast or Dinner - I do enjoy breakfast, but I love dinner foods. I like weeknight meals at home to fancy dinners at a nice restaurant. I've made this quick and easy weeknight meal that we've enjoyed eating for dinner a few times already.
3. Appetizer or Dessert - I love both but I picked appetizer. I love it when we all go out for a family dinner and share appetizers. These buffalo cauliflower wings are a favorite appetizer we like to eat at home.
4. Pancake or Waffle - I LOVE pancakes.
5. Pizza or Calzone - I like eating a slice of pizza more than a calzone. We had this delicious tasting pizza when dropped off my daughter at college last August.
6. Pasta or Ramen - I LOVE pasta. I like making this easy slow cooker pasta for a weeknight meal.
7. French Fries or Onion Rings. I LOVE french fries.
8. Pie or Cake - I like both desserts but I pick cake. We had this delicious Oreo cookie cake to celebrate my daughters birthday last year. We all had fun indulging in this yummy tasting cake!

Happy Earth Day everyone!
I'm so happy it's spring and we are celebrating Earth Day. I thought it would be a great idea to share some different ways to celebrate Earth Day.
Last year I planned out how I was going to use seeds for my container gardening. If you missed that post you can read about it here. I bought the seeds and trays that I wanted to use online from Amazon.
I bought this big bag of soil and some seed packets to use from Home Depot. I enjoyed watching the process of the seeds growing indoors on my windowsill.
The hard part was to try and transplant the seedlings into pots to grow. You can read about that blog post here. I had a hard time trying to get the seedlings to grow strong without dying. I also had squirrels digging up the seedlings. If you've tried growing plants from seeds and had success with it, please let me know what you did.
I tried re-growing lettuce last year with success. I transplanted the romaine lettuce into a large pot outside in my yard. I was happy that the lettuce head grew big enough for us to eat salads a few times.
I had an old plant stand that was rusted out and I made it over last year to look pretty. The stand just needed some paint that I had leftover from my bathroom redo a few years ago. This was an easy and economical DIY project. I am happy I was able to save the plant stand instead of throwing it in the trash.
- You can change out using a plastic straw for a metal straw. You can also bring one to a restaurant to use.
- Use a cloth tote bag when shopping. There are so many available that are made with thin material that will fit into your handbag.
- When gardening use biodegradeable peat pots.
- Instead of buying plastic bottles of water, you can use a Swell bottle or a similar bottle for water.
- I started using The Original Makeup Eraser to remove my mascara and makeup. You add warm water to the cloth and it removes all of your makeup with ease. I used to use makeup remover wipes to take off my makeup. It's an eco-friendly way to remove makeup. I bought my set at Costco. It's also available on Amazon.
- Buying clothes at a Thrift Store. I know my daughter and her friends like to buy clothes in thrift stores and also at online thrift stores.
How will you be celebrating Earth Day?
I love shopping at Trader Joe's. It's always exciting for me since we don't have a TJ's store nearby. I did some shopping there last month and I'd love to share with you what I bought and liked.
They had a nice selection of spring plants and flowers.
They had the biggest artichokes I've ever seen. I picked up two of them and made my Instant Pot Stuffed Artichokes. I usually make artichokes every spring.
I thought this Secco Peach Bellini drink looked interesting. I didn't buy it but I will have to try it if I see this the next time I shop at TJ's.
I'm glad I picked up this bag of nuts as they tasted so good. I enjoyed eating this snack and it went very fast. I snacked on this at night while watching TV.
We liked this pizza with the cauliflower crust. It went great with our salad.
We enjoyed this sauce with whole wheat pasta.
We are big fans of their whole wheat pasta and the brown rice pasta is ok.
I like snacking on this hummus with pretzels.
This eggplant spread tastes great on whole-wheat crackers.
We liked this frozen chicken chow mein and had it with egg rolls for dinner.
We enjoyed this vegetable fried rice for a side with dinner.
I like using both of these cooking sprays when preparing our meals.
My husband likes to add coconut or almond milk into our protein shakes every morning for breakfast.
I love their packaged salads and these are two of my favorites.
What we didn't like:
I made these protein patties for dinner and they were ok. I like the Beyond Burgers from Costco more than these burger patties.
I made this plant-based Italian sausage with peppers for dinner. They were not so good tasting and we won't be buying these again.
