Since we can't get out and go on any fun day outings, I thought it would be fun to take you on a virtual tour of The Vessel.

Looking back now I'm so happy and thankful I was able to take that day trip last spring to The Vessel at Hudson Yards, in New York City.
The Vessel is a large structure that you can go on if you buy tickets. It's located at Hudson Yards. This time we didn't go on the Vessel because the lines were too long. To make up for it we walked around the area while I took photos.

I thought the white daffodils looked so pretty lined along the area.
You can see crowds of people looking and taking photos of the Vessel.
The Vessel rises 16 stories high and consists of 154 flights of stairs, 2,500 steps, and 80 landings for visitors to climb.
The next time you can travel to New York City, The Vessel is a must-see attraction.

Hello blog friends. I found this recipe recently in the New York Times Newspaper. The meatballs looked so good and this recipe is so easy to make that I had to share it with you.
The recipe calls for just a few ingredients and in less than a half-hour, you can eat these Korean Meatballs.
I made the meatballs for dinner and I added brown rice on the side and some french fries and a salad.
These meatballs are a winner and perfect as an appetizer or perfect for dinner. I hope you enjoy these meatballs as much as my family.
KOREAN BARBECUE-STYLE MEATBALLS
** Recipe found in The New York Times Newspaper
Time: 20 Minutes
Yield: 4 Servings
INGREDIENTS:
1/2 cup chopped scallions
2 tablespoons low-sodium soy sauce
2 tablespoons minced garlic
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1/2 cup finely crushed Ritz crackers (12 crackers; see Tip)
1 pound ground beef (round or chuck)
DIRECTIONS:
1. Heat oven to 425 degrees. In a large bowl, combine all of the ingredients and use your hands to gently mix.
2. Shape the meat into 12 golf-ball-size rounds (about 2 inches in diameter), and arrange on a greased rimmed baking sheet.
3. Bake until golden and cooked through, about 15 minutes. Serve warm.
NOTES: Leftover meatballs freeze well and can be reheated in the oven at 375 degrees until warmed through (about 20 minutes).
TIP: To make the Ritz crumbs, place the crackers in a resealable plastic bag and lightly crush them with the back of a wooden spoon or measuring cup.
For a Simple Dipping Sauce: Combine 2 tablespoons soy sauce and 1 tablespoon distilled white wine.
What I changed around in the Recipe: I didn't have any Ritz crackers so I used instead Saltine crackers. The recipe calls for 1 teaspoon of kosher salt and I used 1/4 teaspoon of sea salt. The recipe calls for 1/2 cup of scallions and I left them out since I didn't have any on hand. The next time I will add in the scallions.

Can you believe it's already the middle of May? I'm happy the weather is finally warming up here.

1. Salad
We went to our favorite place Just Salad for take out salads again. I loved eating my Protein Vegan Salad which consisted of romaine, kale, chickpeas, edamame, beets, pickled onions, roasted pumpkin seeds, and hemp hearts with a maple cider vinegar.
2. Costco Finds
Mr. JCL and I made a recent trip to Costco and I bought this Everything Bagel seasoning. This seasoning is a big hit and we love putting it on avocado toast.
I needed new kitchen towels and I love these new Ralph Lauren towels I scored.
3. TikTok Recipes
I love these TikTok recipes my daughter has been making lately.
She made this Avocado Egg Bake in muffin tins. We like it so much that we've had it two times already. I'll share this recipe with you soon.
My daughter and friend also made Buffalo Cauliflower and Honey Barbecue Cauliflower. It came out so good that we've had this about 4 times. I'll share how to make the cauliflower recipes soon.

4. Birthday Tea
We celebrated my daughters birthday last week. Her college friend gave her this box of teas with all of her favorite literary authors on each tin. I enjoyed the tea in the William Wordsworth tin. It was the perfect gift for my daughter.
5. Birthday Food
I went to our favorite cafe for birthday take out food. For the birthday breakfast we had bagels with egg frittata's.
We had chocolate Oreo cake and I bought rainbow cookies and a chocolate pastry.
6. Bosco Chilling
The weather was so nice last weekend. Bosco enjoyed just chilling in the yard.
7. Mother's Day Plants & Flowers
Every year for Mother's Day we visit a local nursery and we buy plants and flowers. I enjoyed the day with my family planting everything in the yard. We also did take-out food from a local Irish Pub that was just perfect.

Hello blog friends.
I did a blog post and shared about growing seeds indoors HERE.
I transplanted the seedlings into bigger pots after the small seedlings started growing.
Below you can see the progress after 23 days of growing.
I am very careful when watering these small plants.
They seem to be growing except for one plant seen below on the right side.
I like seeing the progress of the plants growing. I will be bringing these plants outside to put them into bigger pots in May.
I wanted to make a fairy garden and I bought the figurines from the Dollar Tree store as seen HERE.
I made the fairy garden in a planter along with flowers my daughter bought from our local nursery.
I hope to add more to my collection of fairy garden figurines.
We planted two tomato plants growing in pots.
Below left is escarole and on the right is cauliflower growing.
We will be adding a lot more flowers and veggies to my gardens. I am happy that my daughter has been inspired to do some gardening.

1. Spring Flowers
I'm so happy we made it to May and I'm looking forward to planting more flowers and veggies in my garden.
I love seeing all of the pretty flowers as I take walks in my neighborhood.
2. Instagram Photo
I spotted this photo on Instagram @flow_grow_glow on how to grow arugula. I make a lot of salads using arugula lettuce. I hope to grow some this summer.
3. Making Soup
I have been making soup every week for a while. I found this recipe for Instant Pot Bean Soup at the blog Pressure Luck Cooking. There is a video to watch with easy directions. We had this soup for dinner recently and it was a hit. I also made the Instant Pot Stuffed Artichokes using the recipe from Pressure Luck Cooking blog and it's a winner.
4. Different Moods of Bosco
We've been having a lot of rain lately. Bosco just hates the rain just like his mom! Bosco decided to come into the basement and watch me do the laundry. LOL. Now if only he could do the laundry!
