Sheet Pan Chicken and Vegetables

Hello friends.  I love making quick and easy week-night meals for my family.  Making sheet pan meals is an easy way to get dinner ready in no time at all.  This chicken and vegetable meal can be prepared, cooked, and ready to eat in less than an hour.

I made it easy on myself and used prepared and cut up fresh vegetables from the supermarket.   

Below, the chicken and vegetables are prepared on a sheet pan and ready to go into the oven.


Below, the chicken and vegetables are done and ready to eat.


For a side you can make rice, pasta, or egg noodles to go with this chicken and vegetables meal.

I hope you enjoy this easy and delicious weeknight meal.


SHEET PAN CHICKEN & VEGETABLES


INGREDIENTS:
  • 6 chicken tenders - cut into bite-size pieces
  • 1 green pepper - cleaned and cut into slices
  • 1 red pepper - cleaned and cut into slices
  • 1 yellow pepper - cleaned and cut into slices
  • 1 red onion - cut into slices
  • olive oil
  • salt & pepper to taste
  • McCormick Mexican taco truck seasoning

DIRECTIONS:

Preheat oven to 400 degrees F.  Take a large baking sheet and line it with tin foil.  Spray pan with cooking spray.  Add to the pan the chicken and vegetables.  Add on top of the chicken and vegetables olive oil and seasonings.  Cook in the oven for 25 to 30 minutes, until the chicken is cooked through and vegetables are tender.

Currently - March 2024

Hello friends, Happy March.  I'm linking up with Jennifer from Overflowing with Thankfulness for her Currently link-up.  We will be sharing this month what we are loving, looking forward to, planning, wearing, and eating.

LOVING:  We recently watched two Yorkie's, named Darcy and Watson.  The last time we watched them was for Thanksgiving weekend.  These are the cutest dogs and they are well behaved.  They are related, the dog on the right (Darcy) is the father, and the son (Watson) is on the left.  We had so much fun with the dogs and we can't wait to watch them again.

   

LOOKING FORWARD TO:  I'm looking forward to the start of spring in a few weeks.  I love the warmer weather and the pretty spring flowers.  I also can't wait for the summer and going to the beach.  My husband and I took a ride to the Jersey Shore a few weeks ago and I took this photo of the ocean and beach.  It was so calming looking at the water and walking on the beach. 


PLANNING:  The Macy's Flower Show is an event I look forward to visiting each year.  I'm looking forward to seeing all of the beautiful flower displays this year.  It will be held this year at Macy's Herald Square from March 24th to April 7th.

WEARING:  I've been wearing a lot of comfortable and athletic wear clothes during the week.  I go to my gym at least three to four times a week so I live in leggings, a t-shirt, and a sweatshirt.    

EATING:  I recently went to a local Greek restaurant with my husband.  We both had beer, shared grilled octopus, and I got a lamb kabob with roasted lemon potatoes and a greek salad.  It was so good but a lot of food, so I took half of it home to eat the next day.  My husband had a burger and rice.  


I've been making this egg bake for a week day breakfast for our family.  It tastes so good and it's easy to make.


When we don't have the egg bake for breakfast, my husband either makes for us a protein shake or yogurt with granola, fruit, and honey.  On the weekend he will make me one egg over easy with toast.  I love that he makes for me breakfast most mornings.

Monthly Musings - Surviving the Winter Months

Hi friends, I'm joining Holly and Patty for their Monthly Musings link-up.  The topic for this month is Surviving the Winter Months, where they ask the questions and we answer them.


HERE ARE THE QUESTIONS:


1.  WHAT DO YOU DO IN THE WINTER THAT BRINGS YOU JOY?  I like to do little things by going for a walk, reading a book, blogging, treat myself to flowers, exercise, and go out to lunch with a friend.

2.  HOW DO YOU STAY WARM AND COZY?  If I'm not leaving the house, I love wearing a black long sleeve top, a sweater/cardigan/sweatshirt, and black jogger pants to stay warm.  If I'm going out to dinner, I like wearing black or straight leg jeans and a turtleneck sweater with black boots.  I bought the black sweater shown below from Amazon.  It's so comfortable and keeps me warm.


 I also love taking a hot shower at night and getting into comfortable pjs, a bathrobe, and be on the couch with a blanket and watch TV or read a book.

3.  WHAT ARE YOU LOOKING FORWARD TO THIS WINTER?  I enjoyed for the first time in two years a few snow storms this winter.  The snow storms weren't huge storms like we've had in the past.  The snow was pretty to look at and not so bad or deep to shovel the snow. 

4.  FAVORITE WINTER ACTIVITIES?  I love taking walks on sunny days and walking in the snow.  We planned a trip last year to Maine, and it was fun going there off season.  We visited Portland, Maine and it wasn't crowded and we went shopping at the LL Bean store during a snow storm.  I love reading a book, crocheting a small project, watching a movie, and blogging.

5.  FAVORITE MONTHS OF WINTER?  I like February because we celebrate Valentine's Day.  I also like the month of March because we like to celebrate St. Patrick's Day.  I usually like to celebrate the occasion by making Irish Soda Bread or muffins.  We always like to go out to a local pub to have our traditional Irish meal of corned beef and cabbage.

6.  FAVORITE DISHES TO MAKE IN WINTER?  I love making soup, crockpot meals, and easy weeknight meals like these air fryer chicken fajitas.

7.  GAS OR WOOD BURNING FIREPLACE?  I don't have either one.  A gas fireplace sounds nice to me because you don't have to worry about putting wood in the fireplace.  It must be nice watching the fire and staying warm and cozy.  

8.  FAVORITE WINTER BEVERAGE?  I love a hot coffee or hot latte.

9.  FAVORITE WINTER MOVIES?  I just watched Paddington Bear with my daughter and I thought this was the cutest movie.

10.  HOW DO YOU STAY HEALTHY IN WINTER?  When the weather permits, I go to my gym at least three times a week.  I usually walk to and from my gym which is a twenty minute walk.  I usually do a weights and Zumba class.  I try to drink lemon water or homemade iced green tea and I try to get a good night sleep.

Three Ingredient Egg Bake

Hello friends.

I love it when I find easy recipes from fellow bloggers.  I found this egg bake recipe from Andrea at Living on Cloud Nine.  She recently shared her healthy recipes round up and I was so excited to try this three ingredient egg bake.


This egg bake tastes delicious and it's so easy to make.  I've made this for my family two times already and they love it just as much as I do.

Thanks, Andrea for this breakfast recipe idea.  I can't wait to try the banana protein pancakes next.


THREE INGREDIENT EGG BAKE RECIPE:


WHAT I ADDED TO THE RECIPE:

  • salt 
  • pepper
  • garlic powder
  • 6 pieces of cooked bacon
  • I sprinkled shredded cheddar cheese on top of the egg bake before going into the oven

Currently - February 2024

Hello friends.  I'm linking up with Jennifer from Overflowing with Thankfulness for her Currently link-up.  We will be sharing this month what we are loving, looking forward to, doing to be romantic, changing, and celebrating.


LOVING:  We've had a few days of sunshine that I love here as the weather has been so dreary, gray, and rainy.  The weather people said we went 11 days straight with no sunshine.

LOOKING FORWARD TO:  I am looking forward to warmer weather and I can't wait for spring to arrive.

DOING TO BE ROMANTIC:  I try to be extra sweet to my husband.  We don't usually exchange gifts for Valentine's Day and we'll go out to dinner.   

CHANGING:  I am trying to prepare healthy meals for my family.  I'm trying to go to my gym two to three times a week.  Once the weather gets a little warmer I'd like to take walks more often.

CELEBRATING:  We will be watching the Super Bowl football game this weekend.  We usually order takeout food and eat pizza and chicken wings.  The week after is Valentine's Day and I'll be going to a Valentine's Day Zumba dance party at my gym, and everyone is to wear pink or red.  They will also be giving out prizes and it'll be fun.  I'll also probably go out to eat with my husband and daughter.
