Quick & Easy Cheeseburger Pie

Hello friends.

I love finding easy to make week night meals.  This is the perfect meal to make if you like cheeseburgers but without the bun.  This cheeseburger pie only takes a few minutes to prepare and then bakes in the oven.  I've made this cheeseburger pie for dinner multiple times and it's a winner with my husband.  

I heated up the beef, onion, and pepper in a large skillet.  I've also made this without using peppers and it tastes great that way too.



Here is the cheeseburger pie baked and out of the oven in 30 minutes.


I hope you like this meal as much as my husband and I do. We like eating this with a salad on the side.

QUICK & EASY CHEESEBURGER PIE

INGREDIENTS:
  • 1 lb lean ground beef
  • 1/2 cup onion, chopped
  • 1/4 cup red bell pepper, diced
  • 1/2 tsp paprika
  • 1 tsp dried parsley
  • 1/2 tsp salt
  • pepper to taste
  • 1 cup sharp cheddar cheese, grated
  • 1/2 cup Original Bisquick Baking Mix
  • 2 eggs

DIRECTIONS:

Spray a pie dish with cooking spray and preheat the oven to 400 F.  Heat a large skillet over medium-high heat and brown the ground beef with the onion, bell pepper, paprika, parsley, salt, and pepper until fully cooked.  Transfer the meat mixture to the pie dish.  Sprinkle the shredded cheddar cheese evenly over the meat.  Mix the bisquick, milk, and eggs in a bowl until well combined (don't worry if a few lumps remain), and pour over the meat and cheese.  Bake for 30 minutes or until a toothpick inserted in the middle comes out clean.

Currently - February 2025

Hello friends and happy February. 💗



I'm joining Jenn for her Currently link-up.  It's held on the first Wednesday of the month.  This is the first chance I've gotten to do this post and the link-up lasts about two weeks.  This month we are sharing what we are loving, anticipating, remembering, sharing, and wish-listing.


LOVING:  I love that January is over and that we are already halfway through February.

ANTICIPATING:  I'm anticipating winter to last a long time especially with all of this snow we are having lately.  I'm looking forward to spring.  I can't wait to see flowers and tulips popping up all over the neighborhood.


REMEMBERING:  I remember when I was little and exchanging the cutest Valentine's Day cards at school.  I loved the cards my daughter would make for us when she was little.  




SHARING:  I'm sharing a few recipes that would be great to have for dinner and Irish soda bread for next month.

WISH-LISTING:  New medium-sized luggage like this one from Beis .  I love this olive green luggage.  I have a soft shell carry-on bag and a large suitcase.  It would be nice to have a medium-sized bag for traveling for a week stay or longer.

Tips for Falling Asleep - Share Our Lives 2025

Hello friends.  I am joining Joanne from Slices of Life for the monthly link-up Share Our Lives.


This month they are discussing Tips for Falling Asleep.



Here are some tips that work for me for falling asleep:

  • I try to sleep at the same time every night unless I will be out late that evening.
  • I try not to drink coffee or caffeine after 3:00 pm.
  • I shower every night.
  • I have a beauty routine I follow every night.  I take off all of my makeup, wash my face, apply eye cream, and moisturize my face.
  • I apply chapstick and hand cream every night.
  • I listen to rain sounds or ocean waves which helps me fall asleep.

What tips do you have to fall asleep?

Books I've Read - February 2025

Hello friends and happy February.  It's been so cold out and the perfect time to stay cozy and read some books.  I'd love to share with you the books I read last month.

I love reading a book during the holidays and this was the perfect book for me.  I picked this book to read from the library on the Libby app, on my Kindle.  This book was good and suspenseful, with a few twists.

After I Do by Taylor Jenkins Reid

It's about a married couple who decide to take a break and separate for a year with no contact with each other.  It shows how Lauren handles being separated from her husband and how her family helps her cope and handle the situation.  I enjoyed this book and other books by this author.  I've read Malibu Rising, The Seven Husbands of Evelyn Hugo, Daisy Jones and the Six, Carrie Soto is Back, and loved them all.
