Spinach Pie

Hello friends.  I recently made spinach pie for dinner.  I used to make this pie all the time when I was first married.  I was looking through some of my old recipes and I came across this one.  I'm glad I made this again as it's delicious and it goes great with a salad.




SPINACH PIE



INGREDIENTS:

  • 3 boxes of frozen chopped spinach - thawed
  • 1 box of Pillsbury Pie Crust - room temperature 
  • 3 eggs
  • chopped ham or prosciutto
  • sprinkle of nutmeg
  • 1 cup shredded mozzarella
  • sprinkle of grated cheese
  • salt & pepper to taste
  • 1 small onion - chopped
  • 1 teaspoon minced garlic
  • 1/4 teaspoon hot pepper flakes  

DIRECTIONS:

Set oven to 380 degrees F.  Squeeze water out of the spinach.  Saute onion with garlic and hot pepper flakes.  Saute chopped ham or prosciutto.  Throw in the spinach and add in nutmeg.  Mix well and take off the heat.  Mix in 3 eggs, and 1 cup of shredded mozzarella.  Mix everything.  Add salt, pepper, and grated cheese.  Spray the pie plate with cooking spray.  Follow the directions on the pie crust package.  Add pie crust to the bottom of the pie plate.  Add in the spinach mixture.  Add pie crust on top.  Bake for 45 minutes. 

NOTES:

I used prosciutto for the spinach pie.  I also brushed one beaten egg on top of the pie crust.  I poked holes in the top of the pie crust with a fork.

  13. My grandma made spinach and white cheese pie and it was the most delicious thing - a feast for the palate! She was a dough whisperer - she could knead the most scrumptious dough, regardless what she was making with it. She thought me how to knead this pie (the pie is done by making several round dough layers, each buttered, joined together and then spread into one big circle using a rolling pin, and filling is added on top), but mine was never as tasty as hers (my opinion, not hers). To get back to your post - I love spinach pie, but I have never added ham. So that sounds tasty and I will definitely try it! Thank you so much for sharing!
