Monthly Musings - June

I'm joining Holly and Patty for their Monthly Musings.  

We will be answering questions on the topic:  Summer-Fun Vacations, Trips and Adventures.



Here are the questions:


1.  Favorite Vacation Destinations?  My favorite vacation destinations are the Bahamas and we stay at the Atlantis.  We also love going to the Jersey Shore.


2.  Best Packing Tips?  I like using packing cubes to pack my clothes in a suitcase.  I bought many years ago these packing cubes on Amazon.  


3.  Road Trips or Fly?  I like both types of vacations.  

4.  Favorite Vacation Memory as a Child?  We used to go camping at the beach when we were little with our cousins.  We would go swimming every day and then in the evening, we toast would marshmallows.  Our families slept in tents and sleeping bags.  We all had so much fun on those vacations.

5.  Ocean, Lake, or Mountains?  I would say ocean vacation be it the Jersey Shore or the Hamptons.

6.  Campout or Indoor Grill?  I would love a campout at the beach.

7.  Favorite Summer Cocktail or Mocktail?  My favorite summer cocktail is an Aperol Spritz.


8.  Most Amazing Travel Upgrade Story?  Many years ago when we were first married we took a trip to Japan and we were upgraded to Business Class.  It was nice to have legroom and all of the food was served on china.  It made the long flight enjoyable.

9.  Ice Cream or Popsicle?  I love ice cream.

10.  Do You Camp?  No.  I only went camping at the beach when I was little.  I don't like anything creepy crawly and I don't like sleeping in a sleeping bag.

Summer Bucket List - 2023

Hello friends.  Happy first day of summer.  I love summer and it's my favorite time of year.  The weather is warm and the sun shines most of the day.  I have listed below a summer bucket list that I hope I can accomplish. 



SUMME BUCKET LIST 2023

  • Go to the beach
  • Go to Coney Island
  • Take a vacation with my husband
  • Gardening - Take care of my plants, herbs, and veggies
  • Annual family summer BBQ
  • Visit outdoor concert
  • Get ice cream
  • Barbecue some new recipes
  • Try out a new recipe
  • Try a new restaurant
  • Read books
  • Stream movies & tv shows
  • Visit a farmer's market
  • Work on my crochet market bag
  • Clean out garage
  • Declutter my basement
  • Vist a museum
  • Take a day trip to a new place

Friday Favorites - Middle of June 2023

Hello friends.  I hope you all had a nice week.  I can't believe that it's already the middle of June.  I am looking forward to enjoying the summer.



We had a few days last week with bad air quality due to the fires in Canada.  One night I took a picture of the sky.  The sky looked so gray.  I'm happy that the air quality was much better this week.


I have romaine lettuce growing and it was ready to be picked.  My husband and I shared a salad this week.


On my walk to the gym this week I saw these pretty flowers.


I made a quick shopping trip to Costco this week.  I needed lettuce, veggies, and fruit.  I spotted this pack of Scrub Daddy sponges.  My daughter turned me onto these sponges.  I love using one in the kitchen for cleaning pots and pans.  I also love using these sponges to scrub down my shower walls.  

Have you ever used a Scrub Daddy sponge?


On my last shopping trip to Trader Joe's I picked up this facial sunscreen.  I love using this sunscreen on my face before I apply my makeup.  This sunscreen is perfect to use during the summer months.

Spinach Pie

Hello friends.  I recently made spinach pie for dinner.  I used to make this pie all the time when I was first married.  I was looking through some of my old recipes and I came across this one.  I'm glad I made this again as it's delicious and it goes great with a salad.




SPINACH PIE



INGREDIENTS:

  • 3 boxes of frozen chopped spinach - thawed
  • 1 box of Pillsbury Pie Crust - room temperature 
  • 3 eggs
  • chopped ham or prosciutto
  • sprinkle of nutmeg
  • 1 cup shredded mozzarella
  • sprinkle of grated cheese
  • salt & pepper to taste
  • 1 small onion - chopped
  • 1 teaspoon minced garlic
  • 1/4 teaspoon hot pepper flakes  

DIRECTIONS:

Set oven to 380 degrees F.  Squeeze water out of the spinach.  Saute onion with garlic and hot pepper flakes.  Saute chopped ham or prosciutto.  Throw in the spinach and add in nutmeg.  Mix well and take off the heat.  Mix in 3 eggs, and 1 cup of shredded mozzarella.  Mix everything.  Add salt, pepper, and grated cheese.  Spray the pie plate with cooking spray.  Follow the directions on the pie crust package.  Add pie crust to the bottom of the pie plate.  Add in the spinach mixture.  Add pie crust on top.  Bake for 45 minutes. 

NOTES:

I used prosciutto for the spinach pie.  I also brushed one beaten egg on top of the pie crust.  I poked holes in the top of the pie crust with a fork.

Currently - June

Hello friends and happy June.


I'm linking up with Jennifer at Overflowing With Thankfulness for what I'm currently loving, doing, trying, seeing, and reading.

This link-up is held on the first Wednesday of each month.


LOVING:  Grill Season.  I'm happy that it's time for grill season.  We've been grilling, steaks, chicken, hamburgers, and hot dogs on the weekends for dinner.  My favorite sides are corn on the cob and pasta salad.   


DOING:  Gardening.  I've planted in my yard plants and flowers.  I planted pink geraniums, pink impatient plants, herbs, and lettuce.  I can't wait to use the romaine lettuce for my salads.   I also have growing a tomato plant, kale, peppers, and eggplant.  We also planted some watermelon.  It'll be fun to see how well everything grows.   























TRYING:  Crocheting.  I'm trying to crochet another market bag.  I am using this free crochet pattern to make my bag.  Last year I made this crocheted bag and I had fun making it.  I decided to make another market bag to use for the beach and pool this summer.


SEEING:  Stray cat.  We've been seeing this stray cat that comes to visit us every so often for the past few years.  We love this cat and my daughter named her Gracie.  She is so cute but she is afraid of people.


READING:  The Paris Apartment by Lucy Foley.  I just started reading this book and I like this thriller already.  I also read the Guest List by this author and I liked that mystery also.

Jess needs a fresh start. She’s broke and alone, and she’s just left her job under less than ideal circumstances. Her half-brother Ben didn’t sound thrilled when she asked if she could crash with him for a bit, but he didn’t say no, and surely everything will look better from Paris. Only when she shows up – to find a very nice apartment, could Ben really have afforded this? – he’s not there.

The longer Ben stays missing, the more Jess starts to dig into her brother’s situation, and the more questions she has. Ben’s neighbors are an eclectic bunch, and not particularly friendly. Jess may have come to Paris to escape her past, but it’s starting to look like it’s Ben’s future that’s in question.

The socialite – The nice guy – The alcoholic – The girl on the verge – The concierge

Everyone's a neighbor. Everyone's a suspect. And everyone knows something they’re not telling.
