Hello blog friends. I am constantly running out of ideas of what to cook for dinner. I stumbled upon this slow cooker Olive Garden Chicken Pasta recipe on the blog Penny's Passion. Penny made this for her family and she said it was a winner. Well, that convinced me to make it too. Below is what my version looked like. It tasted so good and it was so easy to make. Here are the details:
WHAT I USED:
chicken cutlets
Wishbone Italian dressing
pepper
rotini pasta
cottage cheese
Pecorino Romano cheese
4 cups of spinach
I cooked mine in the crockpot on HIGH for 4 hours.

SLOW COOKER OLIVE GARDEN CHICKEN PASTA
Recipe Adapted by Penny's Passion
INGREDIENTS:
2 pounds of boneless, skinless chicken breasts
16 oz. Olive Garden Italian Dressing (can be made with other Italian dressing)
1/2 cup grated parmesan cheese (divided)
1/4 tsp. black pepper
8 oz. cream cheese
16 oz. penne pasta
DIRECTIONS:
Add the chicken breasts to the slow cooker. I cut mine in half because they were pretty large (the author of recipe). Pour the Olive Garden Italian dressing over the top. Sprinkle 1/4 cup of the grated parmesan cheese and pepper the mixture. Cut cream cheese into several pieces and place them on top. Cook on HIGH for 4 hours or LOW for 5-6 hours. When cooking time is complete, shred the chicken and place it back in the crockpot. Cook the pasta on the stovetop as directed on the package. Drain the pasta and add it to the crockpot with the chicken mixture and stir to combine. Sprinkle the remaining 1/4 cup of parmesan cheese over the top.
WHAT I CHANGED IN THE RECIPE:
I used: Wishbone Italian Dressing
I used: Pecorino Romano grated cheese
I used: 8 oz. of cottage cheese
I used: 16 oz. Rotini pasta
I used: 4 cups of spinach
** With making these changes to the recipe it was a winner and tasted delicious. I had a half-pound leftover and I put it into a container for the freezer. We will be able to have this for dinner another night.
