Hello blog friends. I love entertaining for the holidays and celebrating Thanksgiving. I hosted Thanksgiving dinner last year with my husband's family and I made this sausage cornbread stuffing. I LOVE stuffing and it's my favorite food for celebrating Thanksgiving besides having dessert. I remember growing up my mom always made the best stuffing.
A few years ago a friend from my crochet club gave me this sausage cornbread stuffing recipe. I've made this stuffing for a few years now and everyone seems to like it. It's a little different from traditional stuffing and made with cornbread, corn, and cheddar cheese. This recipe makes enough stuffing for 6 to 8 people.
I also served last year these corn pudding muffins and everyone loved them.

SAUSAGE CORNBREAD STUFFING
Prep: 15 minutes
Serves: 6 people to 8 people
INGREDIENTS:
1 small onion, chopped
2 celery stalks, chopped
1/4 pound pork sausage
1 1/4 cups water or chicken broth
1/2 cup whole kernel corn
1/2 cup shredded cheddar cheese
1 tablespoon chopped fresh parsley or 1 teaspoon dried parsley flakes
4 cups Pepperidge Farm Cornbread Classic Stuffing Mix
DIRECTIONS:
Heat oven to 350 degrees F. Cook the sausage in a large skillet over medium heat until browned. Stir often to separate the meat. Pour off any fat. Stir in water, parsley, onion, celery, corn, and cheese in the skillet. Add the stuffing and stir lightly to coat. Spoon the stuffing mixture into a greased 1 1/2 quart casserole dish. Cover the dish with foil. Bake at 350 degrees F. for 25 minutes or until stuffing mixture is heated through.
** NOTES: I used chicken broth and dried parsley flakes for the stuffing. I used a large tin pan to bake the stuffing.

I've never thought of adding cheddar cheese but it would give it lots of good flavor! Thanks for the new recipe. Stuffing is my favorite part of the meal!
ReplyDeleteI love cornbread stuffing and I make one that part cornbread every year now. I sometimes add veggie sausage and it is such a great combination. I bet this one is amazing!

ReplyDeleteHi Julie, I make a cornbread stuffing every year. This recipe is totally different with sausage, corn and cheese. Thanks for sharing. Stuffing is a favorite with lots of gravy.

ReplyDeleteI love cornbread dressing! My grandma always made the best, and then when she passed away, my mom made it every year. It never had corn or sausage in it but your recipe looks divine, Julie. Yum!! :-)

ReplyDeleteMy mom always made the most delicious traditional stuffing growing up, but with the occasional vegan and dedicated vegetarians in the house, I've had to get creative and cut out the sausage. So I tried a cornbread stuffing one year and now it's a staple. I love the cheese addition. I bet it adds a lot of flavor. I might have to try that this year!
