Avocado Egg Bake

Hello blog friends.  

I discussed with you here how my daughter found some recipes on TikTok that she wanted to make.  

She made this avocado egg bake for breakfast and we liked it so much that we've made it a few times.

The Avocado Egg Bake is shown below in the muffin tin before it is baked in the oven.


Below you can see how yummy the Avocado Egg Bake looks done and out of the oven.


I'd love to share with you how easy it is to make an Avocado Egg Bake.  

This is a healthy breakfast or lunch idea and I hope you like this as much as my family.

AVOCADO EGG BAKE



INGREDIENTS:

  • avocado
  • eggs
  • salt & pepper to taste
  • everything bagel seasoning (if you desire)
  • shredded cheese - (if you desire)
  • muffin tin or baking sheet

DIRECTIONS:

Cut the avocado in half and remove the pit.  Scoop out some avocado from the center to make room for the egg.  Place avocado in a muffin tin or on a baking sheet sprayed with cooking spray.  Break an egg into the center of each half of avocado.  Sprinkle with seasoning and cheese on top (if you desire).  Bake in the oven at 400 degrees F. for 15 minutes.

  7. Yum! We love avocados too and normally add it to salads, or make it to an avocado sandwich. Yay for now making it to breakfast bake! Btw, do you leave skin on when cooking?
