Brussels Sprouts

Here is an easy recipe for brussels sprouts that I posted back in March of 2013 and I would love to share it with you again.  Since then I have been making this vegetable for our family at least twice a month and sometimes more.  This vegetable has become a favorite in our house.



Prep time: 10 minutes
Cook time: 40 minutes
Serving size: 6


1 1/2 pounds brussels sprouts
3 tablespoons olive oil
3/4 teaspoons kosher salt
1/2 teaspoon ground black pepper


Preheat oven to 400 degrees F.  Cut off brown ends of brussels sprouts and pull off any outer yellow leaves.  Mix them in a bowl with the olive oil, salt and pepper.  Pour them onto a sheet sprayed with Pam and roast for 35 to 40 minutes, until crisp on the outside and tender on the inside.  Shake the pan from time to time to brown the sprouts evenly.  Sprinkle with more salt and serve immediately.

Note:  I cut the brussels sprouts in half if they are too large.

    I love Brussels sprouts and really miss them as we can't find them on the island anymore! We used to be able to find frozen ones, but even they have stopped! Your recipe is simple and delicious, counting on the seasonal veggie for its burst of freshness and taste!

  7. My memory of brussel sprouts from my childhood is a slimy gross vegetable. Yuck! Everyone tells me that roasting them tastes SO different! I am going to have to give this recipe a try!
