Summer Egg Salad Recipe

This recipe was given to me by my friend Hazel.  She said to try this recipe with just one egg because I had never had this before and I wasn't sure if I would like it.

Well, I loved it so much that I want to share it with you.  It is so good and there is no mayo in the recipe.

This recipe is a good side for any lunch or dinner during the hot summer months.

SUMMER EGG SALAD RECIPE



SUMMER EGG SALAD RECIPE
Serves 4
Prep time: 15 minutes
Total time: 30 minutes

Ingredients:

4 hard boiled eggs, peeled and chopped
1 large tomato, chopped
1/4 cup red onion, chopped
5 teaspoons olive oil
salt and pepper to taste

Directions:

In a medium bowl stir together eggs, tomato, and red onion until combined and set aside.  

In a small bowl whisk together olive oil, salt and pepper.  Add this to the egg mixture and mix all together.
