Hi friends, I'd love to share with you this recipe I found on Pinterest. This easy and delicious recipe is from Betty Crocker. The nice part about this recipe is that there is no pie crust.
I have been making this Vegetable Pie for a few months and it's a family favorite. This makes a great meatless dish paired with a salad on the side. I hope I have inspired you to make this for lunch or dinner.
IMPOSSIBLY EASY VEGETABLE PIE
Ingredients:
2 cups chopped broccoli or sliced fresh cauliflower
1/3 cup chopped onion
1/3 cup chopped green bell pepper
1 cup shredded cheddar cheese (4 ounces)
1/2 cup Original Bisquick mix
1 cup milk
1/2 teaspoon salt
1/4 teaspoon pepper
2 eggs
Directions:
Heat oven to 400 degrees F. Grease 9 inch pie plate. Heat 1 inch salted water to boiling in medium saucepan. Add broccoli; cover and heat to boiling. Cook about 5 minutes or until almost tender; drain thoroughly. Stir together cooked broccoli; onion, bell pepper and cheese in plate.
Stir remaining ingredients until blended. Pour into pie plate.
Bake 35 to 45 minutes or until golden brown and knife inserted in center comes out clean. Cool 5 minutes.
* NOTE: If you do not have some of the ingredients on hand such as peppers or the onion this recipe still tastes great.

This looks great! I love egg casseroles for dinner, but my husband doesn't like the ones with soaked bread. I will have to give this one a try!

This looks really yummy, I will try it, but I eat gluten-free so would have to sub something for the bisquick. I'm getting into potato starch recently for the health benefits and as a thickener for soup, so I would try it first.
