We recently had grilled chicken for dinner and I'd love to share with you the marinade I made. This marinade is so easy to make and makes the chicken taste really moist and delicious. You can marinate it overnight for a really great flavor.
GREEK MARINADE
GREEK MARINADE
1/2 cup extra virgin olive oil
1 cup fresh lemon juice
4 garlic cloves, minced
1/4 cup oregano or 1 teaspoon dried oregano
1/4 cup minced fresh parsley or 1 teaspoon dried parsley
2 teaspoons red pepper flakes
Combine all the ingredients in a jar and shake well. Makes enough to marinate 2 to 3 pounds of chicken or fish. Makes about 2 cups.
* I saw this recipe in the newspaper last week and tweaked it a little. The recipe calls for fresh oregano and parsley but I used them dried. It also called for 2 teaspoons of red pepper flakes, but I used just 1 teaspoon.

I have all of the ingredients and this sounds so good. We always marinate our chicken before we grill it. I would use a few less pepper flakes, too! lol Hugs, Diane

ReplyDeleteGood Morning Julie, I love this marinade as it is one which a dear Greek friend of mine gave me. I grow and dry my own oregano and that certainly gives the chicken an extra delicious flavour.
