I have another instant pot soup recipe to share with you. This soup will warm you up on a cold day or night for lunch or dinner.

This soup is made with vegetables and no meat. It cooks up so fast in the Instant Pot and can be ready in about a half-hour. When everything is cooked in the pot the vegetables cook down and make a thick hearty soup.

INSTANT POT SPLIT PEA SOUP

Servings: 8 People
INGREDIENTS:
3 tablespoons butter
2 teaspoons minced garlic
2 ribs celery, diced
12 small carrots, diced
12 small red potatoes, diced
1 lb. dry split peas, rinsed
4 cups chicken stock
2 cups of water
salt and pepper to taste
Mrs. Dash seasoning to taste
1/4 teaspoon turmeric
1/4 teaspoon hot pepper flakes
DIRECTIONS:
Turn Instant Pot to SAUTE setting. Add butter, minced garlic, celery, carrots, and potatoes to the pot. Season the vegetables with all of the seasonings and saute for about 5 minutes. Add the peas, water, and chicken stock to the pot. Cover and set pot to MANUAL setting, high pressure for 15 minutes. Allow the pressure to naturally release for 10-15 minutes. Open the pot and mix the soup. Serve immediately.
NOTES:
You may store soup in the refrigerator for up to one week. Freeze in an airtight container for up to 6 months.

I usually have frozen chicken cutlets in the freezer to thaw for a weeknight meal. One day I didn't take out of the freezer the chicken cutlets. Instead, I decided to make this chicken dish using the frozen chicken in the Instant Pot for a quick meal.
I was amazed at how this dish came out tasting so fresh and delicious. I also made Instant Pot White Rice as a side to go with this meal.
This chicken dish reminds me of Chicken Stew. If you like using the Instant Pot, I hope you'll try out this easy weeknight meal.

INSTANT POT
FROZEN CHICKEN AND POTATOES

INGREDIENTS:
5 frozen chicken cutlets
1 cup of chicken or vegetable broth
1 tablespoon minced garlic
1/4 teaspoon turmeric
1/4 teaspoon hot pepper flakes
12 small potatoes - cut up small
1 small bag of frozen mixed vegetables
1 tablespoon butter
1/4 teaspoon salt
1/4 teaspoon pepper
DIRECTIONS:
Spray bottom of Instant Pot with cooking spray. Add butter, garlic, and broth into the pot. Place frozen chicken, potatoes, mixed vegetables, and spices into the pot. Close the lid and make sure the vent is sealed. Press the Manual Setting/High Pressure and set to 25 minutes and natural release.
SUGGESTIONS:
You can make rice or mashed potatoes for a side and then place the chicken mixture on top.

I usually make this type of soup at least once a month during the fall and winter months.

One evening I decided to make it in the Instant Pot. I didn't have time to make it in the crockpot so this was the perfect solution.

This lentil soup tastes so good and the best part is that it cooks fast in the Instant Pot.
Your soup can be ready to eat in 23 minutes!

INSTANT POT LENTIL SOUP

Prep Time: 10 minutes
Instant Pot Cook Time: 16 minutes
Serves: 12 bowls
INGREDIENTS:
1 package of brown lentils - rinsed clean with water
1 tablespoon olive oil
2 tablespoons minced garlic
1 - 8 oz. can tomato sauce
6 carrots, diced
2 large potatoes, chopped
1 cup celery, diced
1 small onion, chopped
salt and pepper to taste
Mrs. Dash seasoning to taste
1/4 teaspoon dried parsley
6-7 cups water
4 cups vegetable/chicken stock broth
4 cups fresh spinach or kale
DIRECTIONS:
Place olive oil, garlic, and onion in the Instant Pot. Turn on Saute setting and let vegetables saute for a few minutes. Add rinsed lentils, carrots, potatoes, fresh spinach or kale, tomato sauce, seasonings, and broth in the Instant Pot. Turn off Saute and Turn on Manual setting and set for 16 minutes. Do Quick Release of steam. (Follow directions in your Instant Pot Manual for Quick Release).
NOTE: This recipe makes a large batch of soup. I will sometimes divide this up into a large container and put the rest into the freezer for another meal. I made my soup using kale.

We used to visit my husband's Italian aunt and she would make the best stuffed artichokes.
I haven't made these in years until one day I was looking for an Instant Pot recipe to make them.

I found this awesome recipe by watching a YouTube video that shows step-by-step on how to make them.
If you like using your Instant Pot then you'll like how fast these artichokes cook up.
INGREDIENTS YOU WILL NEED:

The Delicious Dipping Sauce!

INSTANT POT STUFFED ARTICHOKES
* Please read my NOTES before making this recipe.

INGREDIENTS:
4 artichokes, stem cut off at the base, cut off tips of each leaf to remove thorny part
1 cup of grated Parmesan cheese
4 tsp of granulated garlic
2 tsp of salt
2 tsp of pepper
1 1/2 cups of water
1 heaping tbsp of crushed garlic
4 tbsp of extra virgin olive oil, divided
DIRECTIONS:
1) Cut off each thorny tip of each artichoke leaf and chop off the stem with a knife. When done, rinse them off and set aside to let dry.
2) Mix together Parmesan cheese, granulated garlic, salt and pepper in a small bowl.
3) Add the water and crushed garlic to the bottom of the Instant Pot which is big enough to accommodate 4 artichokes and add the trivet.
4) Holding one artichoke at a time over the pot, spread the leaves and add about a 1/4 of cheese mixture trying to get it in between the leaves and lay each artichoke on the trivet when done. (Any mixture that falls off the artichoke will go into the water in the pot which will become our dipping sauce). Squeeze the artichokes together so they fit as best as possible.
5) Drizzle each artichoke with 1 tbsp of extra virgin olive oil, allowing the excess to land in the water of the pot.
6) Cover pot and hit "Manual" or "Pressure Cook" High Pressure for 10-20 minutes (go to 10 if you want it a little firmer and go to 20 if you want it very soft). Quick release. Carefully remove the artichokes with tongs and set on a plate.
7) The water will darken and become the dipping sauce for your artichokes. Pour into a bowl.
8) Serve immediately. Each leaf should easily tear out. Dip each leaf and skin the meat off with your teeth and discard the leaf. Then eat the heart if you desire to work to get it out (some say this is the hidden treasure of the artichoke).
9) Enjoy!
NOTES: This recipe was adapted from Pressure Luck Cooking. The blog has step by step photos and a video on how to cook the stuffed artichoke in the Instant Pot.
For my recipe, I did not have any granulated garlic, so I used dry minced garlic. I also used two tsp. of salt and it tasted like too much salt for me. The next time I make it I will only use one tsp. of salt. I used inside the bottom of the Instant Pot minced garlic instead of crushed garlic. The recipe calls for extra virgin olive oil but I used regular olive oil.
For the cooking time in the Instant Pot, I cooked it for 10 minutes.
** I have recently added 1/2 cup of seasoned bread crumbs to the stuffing for this recipe. The stuffing tastes better by adding in the bread crumbs.
** The Instant Pot that I use is: Instant Pot Duo 7 in 1 Programmable Pressure Cooker - 6QT.

One of the ways I can make a quick meal is with the Instant Pot. I love using the IP for making a lot of weeknight meals.
I have made this dish, Tuna Noodle Casserole in the Instant Pot so many times. You can see in the photo below, it's still in the pot and just made.
I just added in 4 cups of fresh spinach leaves instead of peas.
You can make this dish with peas, spinach, or any veggies that you like. I wanted to change things up a bit and use spinach instead of the peas.

Instant Pot Tuna Noodle Casserole
Ingredients
- 1- 7oz. can - drained tuna
- 1- 12 oz. bag egg noodles
- 1- 15oz. can - drained peas or 4 cups of fresh spinach leaves
- 2- 10 1/2 oz. cans cream of mushroom soup
- 1 cup shredded cheddar cheese
- 3 1/2 cups water
- Place pasta in the Instant Pot and cover with water. Add tuna, peas or fresh spinach leaves, and soup on top of the pasta. Cover lid and place on Manual High Pressure for 4 minutes. Do a quick release. Next stir in cheese and mix all together.
- Done.

In our house we LOVE rice and I make it at least once a week. We love it as a side dish to a lot of our meals. We usually have rice with our chicken and fish meals for dinner. My daughter likes to mix rice with guacamole and sometimes mixed in with eggs.
This tastes so good cooked this way and it always comes out light and fluffy. You can even eat this by itself or add it to soups.

Instant Pot White Rice

This is a fast and easy way to make perfect white rice in the Instant Pot.
Ingredients
- 2 cups white rice
- 2 1/2 cups water
- 3 tablespoons butter
- 1 teaspoon salt
Instructions
Rinse rice and place in the Instant Pot pan. Pour water over rice, add butter, and salt. Stir all of the ingredients in the pot. Place the lid on the Instant Pot. Secure in place and set to the Sealing position. Press Rice button and adjust the time to 12 minutes. Natural release for 10 minutes. After you hear the beeper, let it sit for 10 minutes. You can tell how long it has been by looking at the display. After 10 minutes, if the pressure is still up manually release the pressure.

Prep time: Cook time: Total time: Yield: 5 servingsI found this recipe when searching for an Instant White Rice recipe HERE. I changed around the recipe a little bit. I added butter instead of the oil and added a little bit more water so that the rice will not stick to the bottom of the pot.
NOTE: To make brown rice, use same directions as above, but adjust time to 23 minutes and natural release and let sit for 10 minutes. Remove pressure and lid.

Today I am here to share with you another Instant Pot recipe. Yes, you can make pasta and meatballs in the Instant Pot in four to six minutes.
I looked and searched for some recipes to make Instant Pot pasta and meatballs on YouTube and some blogs. I was so happy when I saw a recipe for this from the blog The Bearded Hiker and they shared the recipe at our Cooking and Crafting with J & J Link Up. I was really amazed that it only took a few minutes to make pasta and meatballs in the Instant Pot, and I knew that I had to try this out.
I made mine in six minutes and the pasta was good, but the pasta was a little soft. The next time I made it, I cooked it for five minutes and I liked the pasta at this amount of time better.

I just love that this cooks so fast and that this meal can be ready to eat in minutes. I always seem to be in such a rush to get food on the table during the week. Using the Instant Pot is the perfect solution for me.
I am so used to using a crockpot and slow cooking my food. I was so upset when both of my crockpots didn't work, but not anymore!
If you do not have an Instant Pot and like to cook food fast then I think you will love it as much as I do. This is a great way to cook your food if you are in a rush or hurry to get food on the table. You can make so many things in this pot and this pasta and meatballs dish will be regular on my menu for dinner.

| Instant Pot Three Minute Steel Cut Oats |
Hello friends. I hope you are all having a good week. Don't you just love eating oatmeal on a cold winter morning? I love how it just warms you up.
One of the things that I asked for this past Christmas was an Instant Pot. It's all the rage right now and people are calling it the wonder pot because it can do so many things in one pot. It is a pressure cooker, slow cooker, rice maker, it saute's, and it even makes yogurt.
I am so happy with my Instant Pot and I've made a few recipes in it. I even made enough soup to eat for dinner and then freeze for another time.
Once you read the manual that is included with the pot and experiment a little you will love using it. I love that I can make oatmeal, soups, and even pasta and meatballs so fast.
The model I received is Instant Pot IP-DUO60 V2. This pot holds about 6 quarts which is the perfect size to use for my family.
My first recipe I made in it was the Three Minute Steel Cut Oats. The recipe is available in the Instant Pot recipe book that was included with the pot.
Below is what the oatmeal looked like when it was done cooking. The oatmeal will thicken up within a few minutes. I added some cinnamon and almond milk on top of mine. The second time I made the oatmeal I added cut up apples, and little bit of quinoa to the recipe. You can experiment and add as much or little ingredients that you like.

The recipe makes enough for 4 servings. My husband and I had enough oatmeal to eat for two times. I did not follow the recipe completely from the booklet and left out a few ingredients. I made the recipe to our liking.

Instant Pot Three Minute Steel Cut Oats

This oatmeal recipe only takes three minutes to cook in the Instant Pot.
Ingredients
- 2 cups water
- 1 cup almond milk
- 1 cup steel cut oats
- 1/4 cup raisins
- to taste cinnamon
- non stick spray
Instructions
Add the water, milk, oats, and raisins to the pressure cooker. Lock on the lid. Use Instant Pot "Manual" function to cook for 3 minutes. When time is up, let the pressure come down and open the pot. Carefully remove the lid, tilting it away from you. Check to see if the oats are cooked enough. If not, lock on the lid and let sit for 5-10 minutes without any heat, during which time it will continue cooking. The remove the lid. Stir and add cinnamon and anything else you like. Refrigerate leftovers. This will last four days in the refrigerator. You can also feeze this in breakfast sized portions.
