Hello friends and Happy Fall.
I love baking all kinds of breads during the fall and winter months.
Today I have an easy recipe to make Banana Bread.
This recipe does not have any walnuts in it, but you can add them or anything else extra that you might like.
When I baked this bread, I used one half cup of whole wheat flour, but if you only have regular flour that is fine to use too.

Banana Bread Recipe

This is an easy and delicious banana bread recipe.
INGREDIENTS:
- 2 to 3 ripe bananans, peeled
- 1/3 cup melted butter
- 1 teaspoon baking soda
- pinch of salt
- 1/2 cup of sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 cup of flour
- 1/2 cup of whole wheat flour
INSTRUCTIONS:
- Preheat oven to 350 degrees Fahrenheit and butter a 4x8 inch loaf pan.
- In a mixing bowl, mash ripe bananas with a fork until completely smooth. Stir the melted butter into the mashed bananas.
- Mix in the baking soda and salt. Stir in sugar, beaten egg, and vanilla extract. Mix in the flour.
- Pour the batter into your prepared loaf pan. Bake for 50 minutes to 1 hour at 350 degrees F, or until tester inserted into the center comes out clean.
- Remove from oven and let cool in the pan for a few minutes. Then remove the banana bread from the pan and let cool completely before serving.
- Slice and serve.

I have a healthy recipe for Tomato Pie that I would love to share with you and it's a great way to use up left over tomatoes grown from the summer.
This dish is great served with a salad on the side. It can be used as an appetizer also.

TOMATO PIE RECIPE
Serves 4 - 6 people
INGREDIENTS:
2 to 3 large tomatoes
1 small bunch of red onions, thinly sliced
1 tablespoon fresh basil, chopped
salt and pepper to taste
3/4 to 1 cup mayonnaise
1 cup grated sharp cheddar cheese
1 9-inch wide deep pie shell
DIRECTION:
Preheat oven to 350 degrees F. Slice tomatoes into thick slices. Place them in layers into the pie shell, sprinkling each layer with onion, basil, salt and pepper. Mix together the mayonnaise and the cheese. Spread the mixture over the tomatoes. Bake for 30 to 45 minutes, until filling is browned. Remove and allow to sit for 10 minutes before cutting into slices to serve.

Cheddar and Applesauce Homemade Dog Biscuits

Ingredients
- ¾ cups whole wheat flour (or rye flour or brown rice flour)
- ½ cup cheddar cheese, grated
- 3 tablespoons all-natural applesauce
- 2 tablespoons water
Instructions
- Preheat oven to 350 degrees F.
- Combine all ingredients in a large mixing bowl.
- Knead dough on a lightly floured surface and roll out to about half an inch thick. Cut treats with a cookie cutter and place on a parchment-lined baking sheet. Bake for about 10 minutes, or until treats are firm to the touch.
- Before freezing or storing, allow cookies to cool and harden, about 50 minutes.

NOTE: The treats typically last up to 1 - 1 1/2 weeks in the fridge. If you don't plan to use up all the treats right away, they can be frozen.

With Easter approaching in two weeks I wanted to share with you a fun and easy Easter Bunny Cake! I made this cake last year with my daughter and we had so much fun decorating the cake.
Here is what you will need to make the Bunny Cake:
1 Box of Betty Crocker Super Moist Cake Mix - Yellow
1 can of cake frosting - White
food coloring - a few drops of red and blue (to make purple)
jelly beans
1 3-D Bunny Pan
Make the cake according to the directions on the box. Then add the cake batter to the bunny pan. When cake is done take out of the oven and let cool before decorating the cake with the frosting. Mix in a bowl the cake frosting and a few drops of red and blue food coloring. Spread frosting all over the bunny cake on both sides and then add the jelly beans.
You can add or use whatever you like to decorate the cake. You can even use coconut with green food coloring to make grass all around the bunny.

Hi friends, there will not be a Makeup Monday this week because I wanted to wish everyone today a HAPPY ST. PATRICK'S DAY!
I made on Thursday afternoon Irish Soda Bread and it came out really good. It was so delicious and not dry at all. Our good friend Mike gave me this recipe from his mom who was from Ireland. I am not sure if he wanted me to share his moms recipe so I am sharing with you a few photos of the bread I baked.
This bread came out so good and we loved it so much that I'm going to make another loaf of it this afternoon! We all love Irish Soda Bread and it tastes so good warm with butter spread on top.
We are going to have corned beef, potatoes and roasted brussels sprouts for dinner tonight and if you want to see my recipe for brussels sprouts you can find that HERE. My husband, daughter and I love celebrating St. Patrick's Day each year and many years ago my husband and I went out with all our friends to the St. Patrick's Day parade in New York City and that was so much fun! Now we usually stay home and watch the parade on TV!
I now want to share with you an Irish Blessing that I like:
