What to Make with Leftover Thanksgiving Turkey

Hello friends.  I can't believe Thanksgiving is in a few days! 

I hosted Thanksgiving last year and made a turkey breast instead of a whole turkey.  I had leftovers for my brother-in-law and sister-in-law and their family to take home and plenty for us to eat.  I also made a roast beef roast with all of the sides.    

I decided last year that I would make leftover turkey salad sandwiches for lunch.  I thought I'd share this idea with you as it's so easy to make and tastes great. 

I made our turkey breast from Wegmans.

I took the turkey and cut it up into small pieces with a kitchen scissor.


My delicious turkey salad sandwich. 



LEFTOVER THANKSGIVING TURKEY SALAD


INGREDIENTS:

leftover turkey - chopped into small pieces
1-2 stalks of celery - chopped
1/2 onion - chopped
2 tablespoons mayonnaise
salt & pepper to taste 

DIRECTIONS:

In a large bowl add turkey, celery, onion, mayonnaise, salt, and pepper to taste.  Mix everything all together.  Add the turkey salad to the bread.  You can also add lettuce and/or tomato to the sandwich.

  6. I was just thinking of a similar recipe this morning! My husband and oldest son love chicken salad and I was thinking if we had enough turkey leftover I'd make them some turkey salad on Friday. Your salad sounds delicious!
