I have another simple and easy vegetable recipe I'd love to share with you.
You might remember when I made the Pizza Stuffed Mushroom recipe that I shared with you last October. The pizza stuffed mushrooms came out great tasting and I found the recipe at The Modern Nonna. I love her easy recipes and I decided to make her Zucchini Pizza Bites. I decided to cut the zucchini diagonally and make them into zucchini pizza.
This zucchini pizza recipe was a hit with my husband and I. I've made them as a side to go with our chicken and fish for dinner.
I took the zucchini and cut them diagonally into somewhat small pieces. I put them on a large sheet pan covered with tin foil and cooking spray.
I added some tomato sauce on top of the zucchini.
I next added mozzarella cheese on top of the tomato sauce. Then I baked them in the oven for about 15 minutes at 450 F.
I hope you enjoy the zucchini pizza as much as my husband and I.
ZUCCHINI PIZZA

INGREDIENTS:
- 2 medium zucchini
- pizza sauce of choice
- Parmesan cheese (any cheese works)
- dry oregano
DIRECTIONS:
- Pre-heat your oven to a high setting (450 F). If your oven doesn't go that high, just choose the highest setting that you can but you need to make them longer.
- Cut the zucchini into 1/4 inch circles or even diagonally too.
- Add a teaspoon of your favorite pizza sauce in each one, a teaspoon of parmesan cheese or any cheese of choice, and some dry oregano is optional.
- Bake at 450 F for 10 minutes and I let mine get golden on BROIL for 1-2 minutes but that's optional.
- Garnish with basil or parsley.
NOTES: From Author
Please note: You can use any cheese you love (vegan, goat, Boursin, feta, parmesan, etc.) it will be delicious with any cheese option so feel free to experiment. You can also use mini pepperonis but it's up to you. I love Rao's pizza sauce but you can use any.
What I changed:
I cut the zucchini diagonally. I added the tomato sauce and mozzarella cheese on top of the zucchini. I cooked the zucchini in the oven for about 12-15 minutes.

ReplyDeleteI have made these for myself a few times when the rest of the family was having regular pizza. I love zucchini so I don't mind the missing crust.

DeleteI used to make something like that when we had a garden and LOTS of zucchini to cook! I know it tastes good!
