I am excited to share with you this healthy pudding recipe. It's from Andrea, who blogs at Living on Cloud Nine. Andrea shared this recipe on her blog last summer. I've wanted to make this pudding for a while and I finally made it a few times. This chia seed pudding tastes so good and the best part is that my family likes it too!

I like that the chia seed pudding is so easy to make with only a few ingredients. We like to eat it for dessert but you can also heat it to eat for breakfast.

CHIA SEED PUDDING
INGREDIENTS:
- 1 -13.5 fl. oz. can unsweetened coconut milk
- 1/2 cup chia seeds
- 1 1/2 cups hot water
- 1/3 cup sugar substitute like Swerve **
- 2 teaspoons vanilla
DIRECTIONS:
In a large bowl, stir the chia seeds in the hot water. Add the rest of the ingredients and divide them into 6 bowls. Refrigerate for at least 4 hours. Enjoy cold or warmed with cinnamon and more swerve on top.
** Swerve is a natural sweetener and is the closest to granulated sugar.
** What I changed in the recipe: Instead of adding 1/3 cup of sugar substitute, I added 1/4 cup of sugar substitute.
