Birthday Oatmeal Cookies

Hello blog friends. 


It was my daughter's birthday at the beginning of May.  




When I saw a recipe for oatmeal cookies posted on Andrea's blog, Living on Cloud Nine, I knew that those were the cookies that I wanted to make.

For the first time baking Oatmeal cookies they came out tasting better then I thought they would.  

I wrapped them in a tin with Happy Birthday paper and sent them to my daughter at college.

My daughter also has a blog called THIS FASHION GIRL and a YouTube channel.  I hope you enjoy looking at her video of a week in the life of a college freshman, finals, and her birthday and opening up the box of surprise cookies.

This is what the first batch of cookies looked like.  The cookies came out looking like oatmeal balls!  LOL.

For the second batch of cookies, I flattened the cookies a little bit with a spoon.

Even though these oatmeal cookies did not come out looking like Andrea's cookies, they still tasted so good and healthy.

BETH'S SPICY OATMEAL COOKIES

INGREDIENTS

1/2 cup butter flavored shortening
1/2 cup butter, softened
1 cup packed light brown sugar
1/2 cup white sugar
2 eggs
1 teaspoon vanilla extract
1 1/2 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
3 cups rolled oats
1 cup raisins

DIRECTIONS

Preheat oven to 350 degrees.  Blend the butter flavored shortening and butter together.  Add the sugars and blend.  Add the eggs, and vanilla and mix again.  Combine the flour, baking soda, salt, cinnamon, and cloves and stir into the sugar mixture.  Stir in the oats and raisins.  Drop by rounded teaspoonfuls onto ungreased cookie sheets.  Bake 10-12 minutes until light and golden.  Cool for a couple of minutes before removing from cookie sheets.  Store in an airtight container.

  15. I've only become an oatmeal cookie fan recently. I used to be able to easily pass them up, but once I had a really good oatmeal cookie, I was hooked! Yours look great!
