Hello blog friends.  I LOVE using my crock pot during the week for quick and easy week night meals.  I came up with the idea to make crock pot stuffed peppers when I saw it in one of my cookbooks.  I changed the recipe a bit to my liking.

Here are a few photos showing how I prepared the stuffed peppers.


What I love about this recipe is that you don't have to put the peppers in the oven to cook.  Once again I can make the peppers in the crock pot, and then I can be doing other things until they are ready to eat.  The peppers come out really tender and moist using this cooking method.

I hope you give this recipe a try as there is no meat in this recipe, and it would be the perfect meal to make for lent.

CROCK POT STUFFED PEPPERS RECIPE

This is a delicious and easy recipe to make Crock Pot Stuffed Peppers!
Prep time: 15 minutes
Cook time: Low 6 hours, High 3 hours
Total time: 3 Hours 15 minutes on HIGH setting
Ingredients
  • 4 sweet peppers
  • 1 cup cooked white or brown rice
  • 1 - 8 ounce can tomato sauce
  • 1 can red kidney beans
  • 2 teaspoons minced garlic
  • 1 dash salt
  • 1 dash pepper
  • 1 dash Italian seasoning
  • 1 cup sweet pepper - chopped
  • 1 cup tomato sauce for bottom of crock pot
Cooking Directions
  1. Remove tops, membranes, and seeds from sweet peppers. Stir together rice, beans, sauce, seasonings, and peppers. Spoon mixture into peppers. Pour tomato sauce into bottom of crock pot. Place peppers filled side up into cooker.
  2. Cover and cook on low heat setting for 6 to 6 1/2 hours or on high heat setting for 3 to 3 1/2 hours. Transfer sweet peppers to serving platter.

    Your crock pot stuffed peppers look and sound scrumptious! I will give them a try for Lent. We had a rich Mardi Gras BBQ on Sunday and then a seafood based lunch on Clean Monday, so we are ready for lots of veggies and meatless dishes.
