Hello friends, with cooler temps here I love using the crock pot.
I have an easy to make crock pot chicken and stuffing recipe to share with you. It makes the perfect back to school dinner idea.
I was looking for a crock pot recipe to make that had chicken and stuffing in it. So after searching Pinterest, I came across this recipe HERE, and it looked really good and easy to follow.
I have made this crock pot recipe about four times already and my family just loves it. I made this recipe in the past using green beans like the recipe calls for and it tasted really good.
This time when I made the chicken and stuffing, I realized that I did not have any green beans, so I used one can of drained and rinsed peas instead. My family happens to like this recipe better with the peas. I also did not have any sour cream on hand and I used water in place of it and the recipe still came out great.
This crock pot recipe is an easy one to make any time of year and the perfect week night meal. If you are making this crock meal around Thanksgiving, then you can just substitute the chicken for turkey.
By the way, the crock pot you see featured in the photo above, was from my mother-in-law, which she used to use. The crock pot is at least 40 years old and still works great. I had an oval shaped crock pot that I loved but the top broke. I still wanted to use the crock pot, but have the lid replaced. My problem was that the company that makes the replacement lids does not make my lid anymore or the crock pot. So that is why I'm using this crock pot and I love it.

Crock Pot Chicken and Stuffing
prep time: 10 MINScook time: 4 hourtotal time: 4 hours and 10 mins
This is an easy way to make chicken and stuffing in the crock pot.
INGREDIENTS:
- 6 chicken breasts
- 1 can of cream of chicken soup
- 1 box of stuffing mix
- cup of sour cream
- 1 small package of frozen green beans or (1 can of peas)
- 1 cup water
- crock pot
- cooking spray
INSTRUCTIONS:
- Spray the crock pot with non stick spray.
- Place defrosted chicken in the bottom of the crock pot as your first layer.
- Open stuffing mix and pour the dry mix over the raw chicken.
- In a separate bowl, mix together the soup and sour cream. Top this mixture over the dry stuffing mix.
- The last layer will be the frozen green beans or peas.
- Now add about 1 cup of water to the top of this mix.
- Cook on high for 4 hours or cook on low for about 7 to 8 hours.
- Tip: About half way between the cooking time, use a fork to fluff the stuffing mix. This will allow the water to drop through the soup mix and create a steam to cook the stuffing. Add less water if you prefer a dry stuffing or add more water if you like it really moist.

Hello friends, as many of you know I love crocheting dish clothes. I found a very nice pattern to make one at the blog party, Cooking and Crafting with J & J on Monday's that I co-host with Jess from Plucky's Second Thought.

I made these dish clothes in a few sittings and I really enjoyed making them. What I liked is that the pattern was so easy to follow.
** I changed the pattern just a little, and I added a chain of ten, to make a little loop at the end of the dish cloth. This way you can hang the dish cloth on a hook.
I used different colored yarn for the dish cloths than for the ones I found from the pattern. I made mine in yellow cotton yarn and a combination of yellow and white cotton yarn.
You can also use colored yarn to match your kitchen or use in different colors depending upon the holidays.
These crocheted dish cloths make great gifts, and I made mine for my husband's Aunt who just turned 80!

I am constantly shopping in Costco and I was so happy when Heather suggested to try out this salsa.
We love salsa and chips to snack on in our house. I went out and bought this for our family, and we all really love it. It tastes so good and has a little bit of a kick but to it and yet it's not too spicy.
Thanks Heather for suggesting this salsa, as you can see by the photo above, we really like it.
I hope to also share in the future some Costco finds that I love too.

Hi Julie, it is always great to find different ways to cook food. i haven't tried that one yet, but i always appreciate more helpful hints. I also use the microwave with wax paper. 1-2 minutes each in the microwave does wonders.
I did not know I could make the corn on the cob in the microwave oven!
I decided to try it out, and boy does it just taste delicious and it cooks so fast. I have been cooking my corn on the cob, in a large pot filled with water, then cooking it for about 20 minutes in boiling water until done.
Wow, I wish I had known about this years ago. If you read this Linda, thanks so much for this easy way to cook corn on the cob. I also want to thank you for all of your help with the recipe generator. I love the way this recipe looks!

I love growing basil each summer. It's so easy to plant and it grows very fast. A few years ago I did a blog post on making pesto sauce from the basil seeds that we planted.
This year I bought the little basil plant (shown above) from Home Depot's garden section and planted it in a large container.
It's so easy to make pesto sauce, and below are all the ingredients you need to make your own. Some recipes call for pine nuts, but I leave them out of my recipe.
I added the ingredients to my NutriBullet, and then blended it for a few seconds.
** If you do not have a NutriBullet, you can blend yours in the blender or food processor.

Homemade Pesto Sauce

You can make this easy homemade pesto sauce using fresh basil leaves.
INGREDIENTS:
- 2 cups fresh basil leaves
- 1/2 cup grated Parmesan cheese
- 1/2 cup olive oil
- 3 garlic cloves
- salt to taste
- pepper to taste
INSTRUCTIONS:
- Combine all of the ingredients in a food processor or blender. Pulse for a few times.
- Stop and scrape down the sides with a plastic spatula. Done!
- Serve over cooked pasta.

Hello friends. I'm happy to be back from my blog break!
Back in May I learned how to crochet the seed stitch and you can read that post HERE. Well, I am on a roll and I wanted to learn another new crochet stitch. I wanted to make a scarf using the Double Crochet V Stitch.
I found the Double Crochet V Stitch very easy to learn, and I had this scarf made in only two sittings! I love working on projects that do not take a long time to make.

I searched Pinterest to find an easy pattern using the double crochet V stitch to make this scarf. The link to this pattern can be found HERE.
This pattern was so easy to follow and I love the way the scarf came out. I enjoy crocheting simple and not too large of a project in the summer months too. I usually will make scarves, cotton dish clothes, or pot holders, since the yarn is cotton like the ones I made HERE.
I used Red Heart White worsted weight yarn and a US I crochet hook. You can use this scarf pattern, found above, and use any colored yarn you like.
I started another scarf in this stitch using a variegated yarn from Red Heart - Icelandic E300_3952 that can be found HERE.

I will be donating this scarf to our crochet sale that we will be having at our church this fall. I love making homemade crochet and knit scarves and cowls. I think they are my favorites to make.
Since I donate a lot of the crochet projects I make during the year, I love to make fast and easy projects like this scarf I made.
