I have made these roasted peppers this summer as a side dish for many of our BBQ and get-togethers. They are a HUGE hit.
Below are all the peppers cut up and ready to be roasted in the oven.

These are so easy to prepare and make the perfect side dish for any meal.

ROASTED PEPPERS

INGREDIENTS:
1 bag of peppers - in assorted colors, cut lengthwise
cooking spray
salt and pepper to taste
DIRECTIONS:
Preheat oven to 400 degrees F. Use a large baking pan and line the pan with aluminum foil. Add cooking spray and add the cut up peppers to the pan. Spray the peppers with cooking spray such as PAM and add salt and pepper to taste. Cook for 50 minutes to 1 hour in the oven until tender and done.

CHICKEN SAUSAGE & PEPPERS RECIPE
Makes 4-6 Servings
INGREDIENTS:
6 Chicken Sausage, cut into small pieces about 1/2 inch
2 Peppers, any color, cleaned and cut into long strips6 Chicken Sausage, cut into small pieces about 1/2 inch
1 Onion, peeled and cut into long strips
2 Tablespoons Olive Oil
DIRECTIONS:
In a large pan saute peppers and onions in olive oil for about 5 to 10 minutes. Add chicken sausage and cook everything together for about 15 minutes until peppers are cooked soft.

Suggestion: Serve with Italian Bread
Note: For a side dish you could also serve this with any type of rice that you like. Try this out it is so good and your family will love it!

This is a recipe that I want to share with you because it is a light and easy recipe to prepare. I found this recipe on the box of Barilla Thin Spaghetti. This is a recipe I made for my family for the first time and they loved it and I hope you all enjoy it too!
Thin Spaghetti with Peppers and Arugula
1 box Barilla Thin Spaghetti
4 tablespoons extra virgin olive oil
1/2 onion, chopped
2 garlic cloves, chopped (I added this to the recipe for extra flavor)
1 yellow bell pepper, cut in thin strips
1 red bell pepper, cut in thin strips
Salt and pepper to taste
1/4 teaspoon hot pepper flakes (I added this to the recipe for extra flavor)
1 cup arugula, chopped (I didn't chop mine)
1/2 cup Parmigiano Reggiano cheese, grated
Directions:
1. Bring a large pot of water to a boil.
2. In a large skillet, heat olive oil, and sauté onions, garlic and hot pepper flakes for 2-3 minutes.
3. Add peppers, and season with salt and pepper. Cook until soft, about 4-5 minutes.
4. Cook pasta according to package directions. Drain and toss with the sauce.
5. Stir in arugula and top with cheese.
Note: Arugula is a dark green, peppery leaf that works well in salads or as a cooked green. It is available year-round, but is best when the weather is mild. Arugula is sold either by the bunch or as loose leaves (much like spinach). In general bunched arugula has larger leaves and loose-leaf arugula has smaller leaves.
* Arugula is also known in Europe as Rocket
