I love growing basil each summer. It's so easy to plant and it grows very fast. A few years ago I did a blog post on making pesto sauce from the basil seeds that we planted.
This year I bought the little basil plant (shown above) from Home Depot's garden section and planted it in a large container.
It's so easy to make pesto sauce, and below are all the ingredients you need to make your own. Some recipes call for pine nuts, but I leave them out of my recipe.
I added the ingredients to my NutriBullet, and then blended it for a few seconds.
** If you do not have a NutriBullet, you can blend yours in the blender or food processor.
Below you can see how it's blended in the NutriBullet.
The pesto sauce can be made in minutes! Below you can find the recipe to make your own Pesto Sauce.

Below you will find a chart for how long you can keep Pesto in the refrigerator or freezer.
I made the pesto sauce and then added it to Rotini pasta. This pesto pasta dish tasted so good and fresh. It's perfect for a summer dinner, and it can be used as a side dish to chicken, fish, and meat.
I hope you enjoy making and eating pesto sauce as much as we do!
Thanks everyone for stopping by. I hope you enjoy the rest of the week and weekend.
I will be ready to help co-host Jess on Monday for our Cooking and Crafting with J & J Link Up.

I have a healthy version of pizza to share with you all. It's Eggplant Pizza and this recipe tastes so good and it's healthy. This recipe is lighter than regular pizza and the crust is eggplant not bread.
This dish is easy to prepare and it can be ready in no time. I'd love to share the recipe with you!
Here is a step by step photo of the process to make the eggplant pizza.

EGGPLANT PIZZA RECIPE
INGREDIENTS:
1 globe eggplant - about 8 ounces and 9-10 inches long
salt - to sprinkle on top of eggplant to draw the water out
2 Tablespoons olive oil - to brush on top of eggplant
2 teaspoons dried Italian seasoning
10 basil strips - cut in strips or chopped (optional)
1/3 cup grated parmesan cheese
1/3 cup grated mozzarella cheese
1 jar Italian tomato sauce - your choice or homemade sauce
salt & pepper to taste
DIRECTION:
Preheat oven to 375 degrees F. Cut both ends of the eggplant and cut it into 3/4 inch slices. Place eggplant on tray and sprinkle each slice with salt. Let sit this way for about 30 minutes to draw out the liquid.
While eggplant sits heat up your tomato sauce on low.
After 30 minutes wipe the eggplant dry with paper towels. Spray baking sheet with non-stick spray and then place eggplant on the sheet. Brush tops of eggplant with olive oil and sprinkle tops with dried Italian seasoning and salt and pepper to taste. Roast the eggplant for 25 minutes.
While eggplant roasts, slice basil leaves and combine together parmesan and mozzarella cheese together. When eggplant is done roasting take out of oven and set oven to broil. Spread a few tablespoons of sauce on top of eggplant and then sprinkle basil on top with generous amount of cheese mixture. Put the tray of eggplant pizza under the broiler until cheese is melted and slightly browned 5 to 7 minutes (but watch carefully not to burn).
Done!
This dish would be great served with Italian or Garlic Bread and a Salad!

This year my daughter and her friend planted basil on Earth Day back in April. They planted the basil from seeds and and it grew into large basil plants. To use it up I decided to make Pesto Sauce.
I picked 2 cups of fresh basil leaves to make the pesto sauce.
I made tortellini pasta with the Pesto Sauce. You can use any kind of pasta you like!
This pesto sauce tastes so amazing and I made it for my family two times already!

It was so pretty and warm in my yard the other day so I decided to take some pictures of my side yard.
I have these pink impatient plants and the bird statue sitting on my side wall. Take a look at the wall, there is an image that looks like a fish.
Another view of where we sit outside and enjoy the summer.
Another topiary tree, I do love this spiral.
My 4 tomato plants I have growing. Hopefully I will have some tomatoes to eat this summer!
And another topiary tree.
I love this peach colored rose I have growing in my side garden.
My mom gave me this beautiful angel statue for me to put in the garden when my husband and I moved into our house 18 years ago!
Another view of my yard.
I have just a few tomatoes starting to grow in one of my pots. I have to wait for them to turn red.
If you look closely you can see the tomatoes hiding in this plant.
Flowers starting to bloom on this tomato plant.

I have growing a spearmint plant and basil, so that I can have spearmint for our ice tea and basil to make pesto or to use in my tomato sauce.
I love this topiary tree I have in my yard and I always plant flowers around it.
