I'm joining Amy from the blog, Coffee and Cocktails at the Casa, for her Currently link-up. It's held on the first Wednesday of each month. This month, we are sharing what we are loving, baking/cooking, watching/reading, planning, and savoring.
LOVING:
What I'm loving right now is that the holidays are over. We are eating healthier meals, and I'm eating less sweets. I've been going to the gym at least three times a week.
BAKING/COOKING:
I haven't been baking anything lately, now that the holidays are over. We are trying to cut back on sweets.
I've been trying to make healthy meals for dinner. One of the easiest meals is making this kale, bean & mushroom soup for dinner. The recipe for this soup can be found here.
I love making this easy sheet pan sausage and peppers for dinner. You can find this sheet pan recipe here. Lately, I've been adding cut-up potatoes to the pan and adding taco seasoning to give this dish extra flavor.
Recently, my daughter and her team visited Eataly to take a pizza-making class. She brought back homemade dough that she had made, and we had pizza for lunch.
I recently made meatloaf for dinner with mushrooms and roasted carrots. We are trying to eat fewer carbs with our meals. I also make a salad each night with our dinner.
WATCHING/READING:
I'm caught up on streaming shows and TV at the moment. Lately, I've been reading books.
I read two books that I enjoyed in January. Tomorrow, and Tomorrow, and Tomorrow by Garielle Zevin and The View from Lake Como by Adriana Trigiani.
PLANNING:
We are trying to plan out what vacations we want to take this year. It's always a process to try to figure out what month and where we want to go. I'm hoping we can get a vacation to the Jersey Shore, as we didn't get to go last summer. Last summer, we all took a trip to Italy and England, which I totally enjoyed. SAVORING:
I look forward to my breakfast dates with my husband. It's a nice way to start our day.

I love going out to breakfast too. You look great in your gym clothes at the gym! All of your meals look so yummy. You know I love that soup. I bet the pizza dough from Eataly was awesome! I have to check out that Adriana T book, I love her books and being transported to Italy! I'm ready for winter to be over!

I read "The View From Lake Como" in January too. I enjoyed it!
ReplyDeleteThat sheet pan dish (and really everything!) looks delicious and healthy. I made some apple bread to freeze but apart from that (and eating it very judiciously!) no baking. Done for the season or at least until Valentine's day! I need to get planning my England trip. I think I'll change things to October instead of May. But not to soon to make arrangements!

I've been trying to eat better and exercise more this year, too. The snow hasn't made it easy though. All I want to do is curl up on the couch and eat chocolate!! I can't wait for spring!
