Hello friends. I have a super easy and delicious chicken pot pie recipe to share. I found the recipe on the Pillsbury website. The chicken pot pie came out great and I got rave reviews from my husband.
Here are a few photos of making the chicken pot pie casserole. This makes a great weeknight meal. It's comfort food at its best. I served this casserole with a salad on the side.
CHICKEN POT PIE

INGREDIENTS:
- 2 cups frozen mixed vegetables, thawed
- 2 1/2 cups shredded cooked chicken
- 1/2 cup milk
- 1 3/4 cups chicken broth
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/3 cup all-purpose flour
- 1/3 cup chopped onion
- 1/3 cup butter
- 1 can (8 oz.) refrigerated Pillsbury Original Crescent Rolls (8 count)
DIRECTIONS:
Heat oven to 350 degrees F. Bring crescent rolls to room temperature. In a 2-quart saucepan, melt butter over medium heat. Add onion; cook for 2 minutes, stirring frequently, until tender. Stir in flour, salt, and pepper until well blended. Gradually stir in broth and milk, cooking and stirring until bubbly and thickened. Stir in chicken and mixed vegetables until thoroughly combined. Remove from heat. Spoon chicken mixture into a greased or sprayed 13x9-inch (3 quart) glass baking dish. Bake for 25 to 30 minutes or until the top is golden brown.

This looks so good - similar to ones I've made before. But I've never tried it with crescent rolls- genius!

That sounds SO good! When we started camping I looked for easy meals to take (we have a freezer and fridge, microwave, etc) So I took a Frozen crustless Chicken pot pie. My son told me....toast home made biscuits, split them open and put them on top when the pot pie comes out of the microwave! That is very good too and I can take biscuits that I've baked and frozen ahead of time. Easy for a quick meal!
