Happy First Day of Spring 2025

Hello friends.


We made it!  It's the first day of spring.  I know a lot of you are happy that it's finally here.



I can't wait to see the tulips and my lily of the valley flowers blooming in my yard.


I can't wait to take long walks with Lucy in our neighborhood.


I love looking at all of the flowers blooming in everyone's yards.


It's great that it stays lighter outside in the evenings.  We can finally wear lighter jackets.



I'm looking forward to when we can sit out in the yard and bring out the grill and use that for our BBQ's.  

I can't wait to start planting spring flowers in pots in my yard and on my front stoop.

St. Patrick's Day 2025 & Irish Soda Bread

Hello friends.  


HAPPY ST. PATRICK'S DAY!!💚🍀


I love celebrating St. Patrick's Day.  One year we got green bagels from our local bagel store to celebrate for breakfast.  They were so good and looked so festive.  I might have to pick some up this year.😀



We like going to a local pub for lunch or dinner to have a good Irish meal.  Some years we've even gone to our local diner for Irish food or done take-out from them.

Below is a corned beef and cabbage meal.

I always make Irish Soda Bread each year.  I always use the same recipe from our friend's mom who was from Ireland.

I made it last week and used a little more buttermilk in the recipe because the batter was very dry.  I also don't boil the raisins.  This Irish Soda Bread tastes so delicious and I even gave some to my neighbor to enjoy.



One year I decided to change things up and made them into Irish Soda Bread Muffins.  They were good but I prefer them as bread.

Chicken Pot Pie

Hello friends.  I have a super easy and delicious chicken pot pie recipe to share.  I found the recipe on the Pillsbury website.  The chicken pot pie came out great and I got rave reviews from my husband.  

Here are a few photos of making the chicken pot pie casserole.  This makes a great weeknight meal.  It's comfort food at its best.  I served this casserole with a salad on the side.






CHICKEN POT PIE

INGREDIENTS:

  • 2 cups frozen mixed vegetables, thawed
  • 2 1/2 cups shredded cooked chicken
  • 1/2 cup milk
  • 1 3/4 cups chicken broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/3 cup all-purpose flour
  • 1/3 cup chopped onion
  • 1/3 cup butter
  • 1 can (8 oz.) refrigerated Pillsbury Original Crescent Rolls (8 count)

DIRECTIONS:

Heat oven to 350 degrees F.  Bring crescent rolls to room temperature.  In a 2-quart saucepan, melt butter over medium heat.  Add onion; cook for 2 minutes, stirring frequently, until tender.  Stir in flour, salt, and pepper until well blended.  Gradually stir in broth and milk, cooking and stirring until bubbly and thickened.  Stir in chicken and mixed vegetables until thoroughly combined.  Remove from heat.  Spoon chicken mixture into a greased or sprayed 13x9-inch (3 quart) glass baking dish.  Bake for 25 to 30 minutes or until the top is golden brown.

Currently - March 2025

Hello friends and happy March! 😊🍀




I'm joining Jenn for her Currently link-up.  It's held on the first Wednesday of the month.  The link-up lasts for about two weeks. This month we are sharing what we are loving, craving, pinning, planning, and appreciating.


LOVING:  I love that we are in March now.  We love celebrating St. Patrick's Day by having Irish Soda Bread that I usually make.  We will sometimes go to a local Irish pub for dinner or do take-out Irish food from our local diner.  


I'm also loving that in two weeks will be the start of spring.  I am done with this cold and snowy winter we had.

CRAVING:  I'm craving right now warm Irish Soda Bread with butter.

PINNING:  I've been pinning many of recipes to my Pinterest food board.  I like pinning food recipes from bloggers I follow.

PLANNING:  We are starting to plan our vacation for the summer.  We usually like to go to the Jersey Shore for a week.  We sometimes rent a house for a week or stay in a hotel.  We are hoping to rent a house so that we can bring Lucy with us like we did last year.   

APPRECIATING:  I'm appreciating that my husband makes breakfast for me and sometimes for my daughter.  During the week he makes us protein shakes.  On a recent weekend, he made me an egg over easy with an English muffin and turkey bacon.  It's the little things like this that I appreciate.

Amazon Prime Purchases - March 2025

We ordered this large Squishmallow dog bed for Lucy.  We have another Squishmallow large pink cow bed in our bedroom for Lucy that we've been carrying up and down the stairs each day to our bedroom.  We ordered this one to keep in our bedroom and the cow bed is in our dining room.  LOL!  This is the only type of dog bed that Lucy likes and will not chew up.


Here is a photo of Lucy laying in her dragon pet bed.  She loves this bed and looks so comfortable when she sleeps in our room at night.

I wanted a copy of this book to read since I couldn't get it from the library.  I read the Housemaid and loved it.  I can't wait to read more books by Freida McFadden.  If I read anymore of these Freida McFadden books I will purchase them on my Kindle.
