Zucchini Pasta Bake

Hello friends and happy October.  In our house we love eating zucchini especially during the summer months.  I had a few zucchini's that I needed to use up and I decided to add them into a pasta bake.  This pasta casserole is so easy to make and it tastes delicious.  I hope you enjoy this as much as my family.


I sauteed the zucchini in a pan with olive oil and seasonings.


I added the pasta and zucchini to a large bowl.


Next, I added in the marinara sauce, cottage cheese, and mixed everything together.  I added everything to a large baking dish, added the cheese, and baked it for a half hour.  



ZUCCHINI PASTA BAKE


INGREDIENTS:
  • 1 lb. pasta
  • 1 tablespoon olive oil
  • 6 garlic cloves minced
  • 3 zucchini, chopped
  • 1 teaspoon Italian seasoning
  • 1 teaspoon onion powder
  • salt & pepper to taste
  • 1 cup of cottage cheese
  • 3 cups of marinara sauce
  • 1/2 cup Parmesan cheese
  • 1/2 cup of shredded mozzarella cheese
  • cooking spray
  • tin foil
  • large baking dish

DIRECTIONS:

Preheat oven to 400 degrees F.  Cook the pasta according to the package directions, taking out 2 minutes early so that the pasta is al dente.  Drain and set pasta aside.  Heat the olive oil in a pan.  Add the zucchini, garlic, Italian seasoning, and onion powder.  Cook zucchini until just tender and season with salt and pepper.  In a large bowl, stir together the pasta, zucchini, marinara sauce, and cottage cheese.  Pour into a large baking dish sprayed with cooking spray.  Top with Parmesan cheese and mozzarella cheese.  Bake for 15 minutes covered with tin foil.  Remove the tin foil and bake for an additional 15 minutes until heated through and the cheese is melted.
