I have a simple Sheet Pan Dinner to share with you.
I was so inspired to make this dish when I saw it posted on Carlee's blog Cooking with Carlee. She made a Maple Balsamic Pork Tenderloin Sheet Pan Dinner.
I changed my dinner around a little and made the Pork Tenderloin without the maple balsamic marinade. I also made ours with roasted peppers instead of string beans.

This dish is so simple to prepare and can be ready to eat in a short amount of time.
PORK TENDERLOIN SHEET PAN DINNER
INGREDIENTS:
PAM cooking spray
tin foil
large sheet pan
1 - 1.5 lb. pork tenderloin
1 - 1/2 bag of peppers - cut up
1 - 1/2 bag of small potatoes - cut up
olive oil
salt & pepper to taste
DIRECTIONS:
Preheat oven to 450 degrees F. Take a large sheet pan and place tin foil in the pan and spray with PAM. Place one pork tenderloin in the middle of the pan. Add salt and pepper to taste on top of the pork tenderloin. Add cut up peppers and potatoes to both sides of the pan. Add olive oil to the peppers and potatoes. Add salt and pepper to taste to the peppers and potatoes and mix all together. Place in oven and bake the roast for 20 - 25 minutes until the center of the pork reaches 145 degrees F. Rest the pork for 5 - 10 minutes before slicing. Done.

ReplyDeleteI just bought a port tenderloin that is already marinated at the store. I never thought to pan cook it with veggies. I might have to add some potatoes and carrots to my tenderloin when I cook it.
