Easy Meatloaf Muffins in Minutes!

Hi friends, this is such a busy time of year and I thought that I would share with you a dinner that can be made in minutes!  Back in November of 2012 I shared with you this recipe and I'm sharing it with you again.  I hope you enjoy it as this is a family favorite.





MEATLOAF MUFFINS

Ingredients:

1 envelope of Lipton Recipe Secrets Onion Soup Mix
2 lbs. of ground beef, pork and veal or just beef if you prefer
3/4 cup Italian bread crumbs
2 eggs
3/4 cup of water
1/3 cup of ketchup

Directions:

Preheat oven to 400 degrees.  In a large bowl combine all the ingredients.  Spray muffin tins with Pam (non-stick spray).  With an ice cream scoop place meat in tins.  Bake for 15-20 minutes.  Makes about 24 mini meatloaf muffins.

  2. What a unique idea! I have seen lots of savory muffins, but never meatloaf ones! Anything with Lipton's onion soup in it has my vote, I bet they are fabulous!

  4. We love meatloaf too and this is a great idea! Quick and easy! We grill our meatloaf. Just mix it up and pat it into a big patty and grill. You're making me hungry! Hungry hugs, Diane

  26. Super! I remember my mother making little muffin meatloaves. So handy to have on hand to quickly heat up and serve on busy days. Or when it's hot and you don't want to run the oven for a long time for a full-sized meatloaf.
