Back in the spring my daughter wanted to go to England and my husband wanted to go to Italy. We decided to combine the two places into one trip. My daughter made all of the travel arrangements for us - airplane and Airbnb. My daughter's friend was coming on the first part of the trip with us to Rome and couldn't make it to London. She met us at the airport and we all flew together.
We went to Rome, Italy for the first part of the trip for about five days. For the last part of the trip we spent about two and half days in London. We had a very late flight on Friday night, May 30th and arrived in Italy the next day in the afternoon. We flew on Norse Atlantic Airways/Premium for a cheap flight with extra leg room, priority boarding, and meals included. I felt like I was in business class and it was wonderful. We also had a pillow, blanket, and an amenity kit included. I slept for most of the flight except for our meals.
At the airport we had someone waiting for us to drive us to our Airbnb. We were staying in Trastevere neighborhood in Rome, Italy. It's a young and lively neighborhood with many bars, pubs, and trattorias. It's a non-touristy neighborhood located across from the Tiber River.

The Airbnb was large and big enough for the four of us. We had someone greet us to let us in and explain the place. This is the side my husband and I stayed and slept in. Below is our living area and a desk.

We were very happy to have air conditioning in the apartment. It was hot and the weather ranged from 80 to 85 degrees each day.

They even supplied us with an espresso machine with capsules to use and Italian cookies.

My husband had a restaurant he wanted to try out but the line to get in was too long and we didn't have a reservation. He saw some restaurants to try on Instagram. 😞 We stumbled upon this restaurant and the food was great.

I had Cacio e Peppe for dinner. I've had it with spaghetti but having it with rigatoni was a nice change and so delicious tasting.
My husband had clams with spaghetti.
This was a wonderful start to our vacation in Europe! 😀

This coleslaw is so easy to make, it tastes great, and it's just in time for the 4th of July. It's the perfect side dish for your next summer barbeque, potluck dinner, or summer picnic.
HOMEMADE TANGY COLESLAW
- 1 bag of coleslaw mix
- 4 tablespoons of mayonnaise
- 1/2 teaspoon sugar - (I used monk fruit sweetener)
- 1 lime - squeeze for juice
- salt & pepper to taste
DIRECTIONS:
Toss the coleslaw mix and the mayonnaise together. Add sugar, lime juice, and a pinch of salt and pepper. Mix everything.

I'm joining Holly and Patty for their Monthly Musings link-up. This month we are discussing - June 2025 Summer Vacation Guide.
1. We just got back from a wonderful European vacation to Rome, Italy and London, England. I hope to share a blog post about our European trip at some point. We may also go to the Jersey Shore this summer for a long weekend trip.
2. I like our laundry done before our vacation. When we return I usually start doing the laundry the next day. It may take a few days to catch up with it all.
3. My most memorable summer vacation was our recent trip to Italy. We took a day bus tour to Pompeii and Sorrento. We had a guided tour of Pompeii and Sorrento that I just loved. I would like to go back again to visit Italy.
4. We normally don't cook when we are on vacation. We like to eat out. When we went to the Jersey Shore last summer we stayed in an Airbnb for a week. We usually had breakfast at the beach house and I would make sandwiches, fruit, and drinks to eat on the beach. We went out to eat each night and one night we did pizza and chicken wings take out. We all ate it in the yard which was fun.
5. I used to be an overpacker for vacations but I seemed to have gotten better at it.
6. I love a beach vacation!
7. I like both a road trip and a fly vacation. We took a road trip last November to Newport, Rhode Island. Sometimes road trips are a lot easier than a fly vacation.
8. My favorite vacation activity is to relax by the pool like I did on my vacation in February to the Atlantis Paradise Island, Bahamas.
9. My best packing tips are to try and have your clothes color-coordinated. For my Europe trip, I had the colors: black, blue, and white. It makes it easy to mix and match clothes. I also use packing cubes on every trip. I try to take as little as possible with makeup and hair products.
10. I don't have any favorite road trip songs.
