Costco Fashion Finds - April 2025

Hello friends.  It's been a while since I've done a Costco Finds blog post.  I recently bought some new clothes from Costco that I'd love to share with you.  


This Lands' End Ladies' Swim Dress caught my eye.  This bathing suit comes in purple and navy.  I thought it would be nice to wear to a pool party or for a beach vacation.  This bathing suit is only $22.99 online.



When I saw this 32 Degrees Women's Skort I thought it would be great to wear instead of wearing shorts on some summer days.



I was pleasantly surprised at how nice this Mondetta Women's Ribbed Biker Short looked when I tried it on.  I can't wait to wear this when I work out at my gym this summer.



I've been getting a lot of use out of this Soybu Women's Long Sleeve Quarter Zip Top.  I wear this with a short-sleeved top underneath to the gym.

Monthly Musings April 2025 - Spring Hosting, Decorating, and Gardening

I'm joining Holly and Patty for their Monthly Musings link-up.  This month we are discussing Spring Hosting, Decorating, and Gardening.


HERE ARE THE QUESTIONS:


1.  We celebrate Easter each year.  We went out to a favorite Italian restaurant for a late afternoon dinner.  The food and service is always good.  All three of us shared a salmon appetizer and fried calamari.  I had Chilean sea bass for my entree and it was delicious tasting.


2.  I like to plant flowers, herbs, and a few vegetables each year.  We didn't plant anything last year because Lucy was a puppy and I didn't want her eating anything by mistake.  I am hoping to do more planting for this spring and summer. 


3.  I like to plant pansies in my planter on my front stoop.  

4.  When I think of a spring dessert I think of pastel-colored macarons, lemon maringue pie, and strawberry shortcake.

5.  My favorite spring flowers are daffodils, tulips, pansies, and lily of the valley.


6.  My tip for hosting a spring event is to stay organized and make lists.

7.  My favorite cocktail that makes me think of spring and summer is an Aperol Spritz.


8.  I like to plant a vegetable and flower garden each year.  When I first plant them it's hard because the squirrels like to dig them up.  I always have to replace a few of them.  


9.  My favorite Easter candy is small chocolate Easter eggs.

10.  I don't like Marshmallow Peeps.  I try not to eat candy anymore.

One Year with Lucy

Hello friends.  We just celebrated Lucy's first anniversary with us on April 6, 2025.

When we adopted Lucy, she was only four months old.  She was so cute and small.  My daughter saw Lucy's bio and she fell in love with her right away.  She wanted us to adopt Lucy, and we applied and were accepted.  Lucy is a Chi/Terrior mix.  She is from the island of St. Thomas and was brought to New York City with her sibling sisters.  

On our first day we rescued and adopted Lucy from Social Tees Animal Rescue.  Instagram @socialteesnyc


Initially, we only let Lucy stay in the kitchen, with a gate blocking off the dining room and living room.
 

Lucy is so sweet and lovable.  My daughter and Lucy are obsessed with each other!  😀🐕  Lucy shares her love for each of us, my husband, daughter, and I.



You can see in the photo below that Lucy was starting to lose her baby look.


Lucy loves going for her walks in the neighborhood.


Lucy is such a silly dog and loves hanging out on the stairs.



When the weather is warm out she loves sitting in the yard in the sun.


Lucy looks forward to the sanitation guys coming each week and giving her a dog treat.  Here she is looking at the truck out the front window.



Lucy loves it when we take her to the dog park.  She plays nice with the other dogs.  This seems to calm her down and she then rests for the rest of the day.


Last year we took Lucy to the Jersey Shore on our beach vacation.  She loved it there and was very good at the house we stayed in for a week.  When we had to leave her alone in the house, she stayed in her crate.


This is Lucy's favorite dragon Squishmallow bed.


Lucy loves to cuddle with me on the couch while I read or watch TV.


Here Lucy is protecting us and being our watchdog. 


It was a little rough in the beginning when we first adopted Lucy.  She is now comfortable with us and her routine.  Lucy is now a year and 5 months old.  We are happy we adopted Lucy and she brings us such joy each day.  I'm looking forward to another year with Lucy. 🐶

My Easter Tradition Each Year - 2025

Hello friends.  It's a tradition in my husband's family to have Spaghetti pie and Pizza Rustica (Italian meat pie) for Easter.


I learned how to make this Spaghetti pie from my husband's Aunt.  It's delicious tasting and I've been making this every Easter season.


I'll be making this Spaghetti Pie this week and serving it with a salad on the side.  It's great to have for lunch or dinner.

I'd love to share this easy and delicious-tasting recipe with you.





SPAGHETTI PIE

Recipe by Julie @ Julie's Creative Lifestyle
Prep time: 15 minutes
Cook time: 1 hour
Total time: 1 hour 15 minutes
Ingredients
  • 1 pound cooked spaghetti
  • 6 eggs
  • 1 cup Pecorino Romano cheese
  • 1 tablespoon black pepper (you can use less)
  • 1 cup milk
Cooking Directions
  1. Preheat oven to 350 degrees Fahrenheit. Let spaghetti cool before mixing. Mix all ingredients together. Spray a large pan (10 x 12) with cooking spray. Add everything to the pan. Add little dabs of butter to the top of the pie. Bake for 1 hour. Let cool before cutting pie into pieces.
NOTE:  This recipe calls for milk, but I substituted it with Almond milk.

Creative Outlets/Free Time - Share Our Lives

Hello friends.  I am joining Joanne from Slices of Life for the monthly link-up Share Our Lives.  This month we are discussing Creative Outlets/Free Time.



One of the things I like to do (depending on the weather) is to take Lucy for a late morning or afternoon walk.  I'm looking forward to when the weather warms up and we can go for longer walks together.



I like to go to my gym in the morning or evening about three times a week to take an exercise class.  I am in the photo in the first row in the middle.  We had a Valentine's day Zumba class that I enjoyed and I have some nice gym friends that I like seeing each week.


When I have free time in the afternoons if I'm in the mood I like to crochet.  



I crocheted this amigurumi Christmas tree right around the holidays for Christmas.  I found the kit on Amazon and everything I needed to make the tree was included.  It was a fun craft to make for Christmas.


I love reading books in the afternoon.  Occasionally I also like to read at night right before bedtime.  This is one of my favorite ways to relax.  You can read about the books I read here.  


I like blogging in the morning or afternoon when I have free time.


When I have free time I like to do any online shopping that I need to get done.  


In the late afternoon, I like to start to get dinner ready.  This way I have dinner already just to heat up when everyone is home from work or their evening workouts.

Crockpot Artichoke & Sundried Tomato Chicken

Hello friends.  I love crockpot meals.  A while ago I found this recipe using chicken, artichokes, and sun-dried tomatoes.  It sounded good so I thought I would give it a try.

I made this recipe twice and my husband and I enjoyed it with rice on the side.  This would also taste great with mashed potatoes.  

Below are all the ingredients dumped into the crockpot before cooking the meal. 


Below, the meal is all done cooking in the crockpot.  I have been using crockpot liners, which I ordered through Amazon, to make cleanup easy.  


This is a simple and easy meal to assemble and cook in the crockpot.

CROCKPOT ARTICHOKE AND SUNDRIED TOMATO AND CHICKEN

INGREDIENTS:

  • 4 boneless chicken breasts
  • 1 jar baby artichokes in water - drained
  • 1 sweet onion - sliced
  • 1/4 cup chicken stock or broth
  • juice from one large lemon
  • 6 slices of lemon
  • 1 teaspoon chopped garlic
  • 2 tablespoons sun-dried tomatoes - chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • salt and pepper to taste

DIRECTIONS:

Add the sliced onion to the bottom of the slow cooker.  Season chicken with salt and pepper and lay on top of the onions.  In a bowl combine the stock, lemon juice, garlic, sun-dried tomatoes, thyme, oregano, and paprika.  Stir to combine.  Pour the liquid into the slow cooker, dispensing over all the ingredients.  Top with lemon slices.  Cook on HIGH for 3-4 hours or LOW for 6-8 hours.  Add drained artichokes.  Cook an additional 30 minutes.  Serve over caulimash, rice, or spaghetti. 

**Before serving the meal remember to take out the sliced lemons.
