Granny Square Baby Sweater Update

January 30, 2013

Granny Square Baby Sweater Update:

I'm still working on the granny square baby sweater and I'm looking forward for this project to be over.  I worked on the sweater for a little bit yesterday afternoon and last night and stayed up working until 11:30pm.  I was so tired yesterday when I went to bed, but I think that I was on a roll sewing together all of those squares (38 in total).  I love crocheting the granny squares, but I hate the putting together process.  There are many ways of putting the squares together.  I chose to sew mine together.  Next time I want to try crocheting the squares together to see if it is easier and faster.  This is the first time I have ever made a granny square baby sweater and it is a lot of work.  I did not have anyone in mind in my family when I decided to make the sweater because no one is having a baby girl, but I wanted to challenge myself to make something different and more difficult than I usually do and I'm glad I did.  It is good to challenge yourself!  My mom had given me the yarn a long time ago because she said that she wasn't going to use it and I said that I would take the yarn because I love the color.  When she gave me the yarn I did not realize at the time that the yarn is from England and it is so soft.  The yarn is Sadar  Snuggly Magic.  Well I just love the name of the yarn.  I just have a little bit more left to do and I will be finished with the sweater.  I wish I had enough yarn to make a blanket but I do not but I can always buy more yarn to make the blanket at some point.

Here is a picture of my progress on the sweater:

Escarole and Beans Soup Recipe

January 27, 2013

This is a great dish to make for lunch or dinner.  It tastes great with thick sliced Italian Bread.

ESCAROLE AND BEANS SOUP

INGREDIENTS:

1 15oz. can of small white beans or a can of cannellini beans
1  8oz. can of tomato sauce
2 teaspoons of garlic, chopped
2 tablespoons olive oil
1 head of escarole, chopped in half, cleaned
1 teaspoon salt
1 teaspoon pepper
1/4 teaspoon crushed red pepper flakes
1 cup of water

DIRECTIONS:

Take one head of escarole and chop in half and rinse clean with water, then put into a large bowl and set aside.  In a large dutch oven pot add olive oil and chopped garlic, sauté until lightly browned.  Next, open the can of white beans and rinse with water and drain.  Take cleaned escarole and put in the pot and sauté for about 5 minutes, add tomato sauce and small white beans and 1 cup of water and spices and cook for about a half hour or until escarole is tender.  The escarole will wilt and cook down and becomes like soup.  Serve in bowls.  Enjoy!

Yummy Escarole and Beans Soup!

For a healthy soup recipe try this out and it will become a family favorite!

What Projects I am Working On

January 15, 2013

My Crochet Projects:

Right now I am working on a Baby Girl Granny Square Sweater that I crocheted.  The pattern is Lion Brand Babysoft (Baby Sweater and Hat) Pattern #: 10392AD.  The yarn that I am using is Sirdar Snuggly Magic, made in Wakefield, England.  I crocheted 38 granny squares and now they need to be sewn together to assemble the sweater.

Here is a picture of what I have made so far:

This is a picture of the yarn.

The next project that I am working on is also a crocheted baby sweater.  It is made in single crochet back loop.  The pattern is from FaveCrafts.com and it is the Tweed Baby Jacket.  For the pattern I am using Caron Wintuk yarn in the color Fisherman 3062.

Quinoa & Brown Rice Stuffed Peppers

January 11, 2013

Hi friends.  I have an easy and healthy recipe to share with you that does not involve any meat.  It's a stuffed pepper stuffed with rice and mozzarella cheese.  This recipe is perfect for Meatless Monday.

QUINOA & BROWN RICE STUFFED PEPPERS RECIPE

INGREDIENTS:

2 Pkgs. of Seeds of Change - Certified Organic - Quinoa & Brown Rice with Garlic (in the microwave oven it cooks up in 2 1/2 minutes if using 2 pkgs.)

1 - 8oz. Can of Tomato Sauce

Shredded or Sliced Mozzarella cheese

4 Red Peppers - Cleaned, the top cut off and cut in half for each pepper

DIRECTIONS:

Heat oven to 350 degrees.  Spray a large flat tray with Pam.  Cook the rice in the microwave as the directions indicate on the package and put in a large bowl.  Then add 1 can of tomato sauce and mix all together.  Clean and cut the peppers in half and fill each pepper with the rice and add mozzarella on top of each pepper.  Put in the oven with tin foil on top for 15 minutes and when 15 minutes are up take off the tin foil and put back in oven for another 15 minutes.  You will be cooking in the oven for a total of 30 minutes until the peppers are done.  You can tell when the peppers are done when you stick a fork in the middle of the pepper and the fork slides in easy.
Done!

**  For this recipe I bought the Seeds of Change - Quinoa & Brown Rice with Garlic at Costco.

I hope you all enjoy this easy and delicious meal for a week night dinner.

January 4, 2013

This is a really easy pasta recipe that I would like to share with you and it does not call for a lot of ingredients.  It's a family favorite in my house and I never have any leftovers.  Enjoy!

PASTA PEAS AND BACON RECIPE

1/2 1b. bacon - cut into small pieces
1 can peas (Save juice from can of peas for the recipe)
1 lb. box ditalini pasta
1/4 teaspoon salt
1/4 teaspoon pepper
 grated cheese

Cut bacon into small pieces and put into a large pot.  Fry the bacon until it is crispy.  Add 1 can of peas with juice to the pot and sauté.  Add salt and pepper to the peas and mix all together.  In another pot, cook the ditalini pasta until done according to the box directions.  You can cook a 1/2 to 1 pound box of pasta according to how much pasta you desire.  Drain pasta and add to the bacon and peas.  Mix everything together and serve.  Sprinkle with grated cheese.
