Hello friends. I love making quick and easy week-night meals for my family. Making sheet pan meals is an easy way to get dinner ready in no time at all. This chicken and vegetable meal can be prepared, cooked, and ready to eat in less than an hour.
I made it easy on myself and used prepared and cut up fresh vegetables from the supermarket.
Below, the chicken and vegetables are prepared on a sheet pan and ready to go into the oven.

For a side you can make rice, pasta, or egg noodles to go with this chicken and vegetables meal.

SHEET PAN CHICKEN & VEGETABLES
INGREDIENTS:
- 6 chicken tenders - cut into bite-size pieces
- 1 green pepper - cleaned and cut into slices
- 1 red pepper - cleaned and cut into slices
- 1 yellow pepper - cleaned and cut into slices
- 1 red onion - cut into slices
- olive oil
- salt & pepper to taste
- McCormick Mexican taco truck seasoning
DIRECTIONS:
Preheat oven to 400 degrees F. Take a large baking sheet and line it with tin foil. Spray pan with cooking spray. Add to the pan the chicken and vegetables. Add on top of the chicken and vegetables olive oil and seasonings. Cook in the oven for 25 to 30 minutes, until the chicken is cooked through and vegetables are tender.
