Slow Cooker Bean Soup with Kale

Hello friends, it's so cold outside and it's always nice to have a bowl of soup to warm you up! I'd love to share with you this healthy and delicious soup recipe that is made in the slow cooker.




Here you can see it cooking in my slow cooker and it is so easy to make.



SLOW COOKER BEAN SOUP WITH KALE

Serves 8 people

INGREDIENTS:

4 cups kale - chopped
1 package dried navy beans or cannelloni beans - rinsed clean with water
1 tablespoon olive oil 
2 tsp. minced garlic
1 - 8oz. can tomato sauce
1 chicken bouillon cube or chicken stock
salt & pepper to taste
1 tsp. dried parsley
9 cups of water

DIRECTIONS:

Add everything to the slow cooker and put setting on HIGH and cook for 6 hours. 
Enjoy!

  2. There isn't a soup out there I don't love, especially this time of year. This does sound super easy Julie, and healthy too. I think I might give it a try but I think I would substitute chicken stock instead of the cube. I don't usually have those on hand, but I believe I have everything else except the kale. It's been a while since I've used my crockpot, so I'm gonna take it out, dust it off, and get cookin!

  6. You know it snowed here overnight and warm soup sounds really good. Too bad I don't have any kale. Yours looks delicious. Slow cooker recipes are my favorite. It can't get much easier than that. Thanks for the recipe.

  12. Mmmm... I love Kale in soup so this would be one I would enjoy :) It's supposed to snow tomorrow through Monday so maybe I will have to make this over the weekend. There is nothing like hot soup on a cold evening. Hugs to you!

  16. I've never heard of navy beans so will look these up and see if they are called something else here... found them... haricot beans. There is nothing better than coming home to a hot soup on these cold days and even better when it is bubbling away in the slow cooker. Thanks for sharing another delicious recipe xx

  19. I don't own a slow cooker or microwave (uses too much electricity with our off-the-grid electrical system) so everything I make is on top of the stove or in the oven. This looks like yet another delicious recipe!
