Oat Bran Pancake Recipe Again!

October 16, 2014

Hi friends, back in November of 2012, I shared with you this recipe for Oat Bran Pancakes.  This recipe was given to me by our friend Ruby.  I would love to share with you this healthy pancake recipe again.

OAT BRAN PANCAKES

Minutes to Prepare: 2
Minutes to Cook: 5
Number of Servings: 1

INGREDIENTS:

1 1/2 tablespoons of Rolled Oats (Quaker Oats)
1 1/2 tablespoons of Greek Yogurt or Cottage Cheese - (I used Greek Yogurt)
1 egg (or egg white if you have cholesterol problems)
a dash of vanilla

Number of serving:  Makes 1 large pancake or 3-4 smaller pancakes

DIRECTIONS:

Put oat bran in a bowl, add Greek yogurt, one egg and a dash of vanilla.  Mix all the ingredients thoroughly and pour on to a non-stick pan that is sprayed with PAM.

Cook for 2-3 minutes on each side.

Note:  Cut into strips and dip into nonfat flavored yogurt, you can use salmon fat free cream cheese or any flavored cream cheese instead of yogurt.

At night for dinner use a tbsp. of tomato sauce, Italian herbs, onion & garlic powder, red pepper flakes, and reduced fat shredded mozzarella melted on top!

These pancakes will keep for at least a week in the refrigerator and wrap them in foil or cling wrap so that they do not dry out.  The pancakes can also be put in the freezer.

For more flavor you could also add in a dash of vanilla and cinnamon.

I hope you enjoy these pancakes because they come out fluffy and moist!

Let me know if you make these pancakes and if you liked them.

Thanks everyone and Enjoy!

  3. These sound so delicious, and look delicious too, but I can only imagine the taste as I am oat intolerant - I wonder what can be used instead of the oats? xx

  11. Sounds delicious and healthy. I would just have to try not to put lots of butter and syrup on them. Dipping slices in yogurt sounds good.
