This dish is great served with a salad on the side. It can be used as an appetizer also.
TOMATO PIE RECIPE
Serves 4 - 6 people
2 to 3 large tomatoes
1 small bunch of red onions, thinly sliced
1 tablespoon fresh basil, chopped
salt and pepper to taste
3/4 to 1 cup mayonnaise
1 cup grated sharp cheddar cheese
1 9-inch wide deep pie shell
Preheat oven to 350 degres F. Slice tomatoes into thick slices. Place them in layers into the pie shell, sprinkling each layer with onion, basil, salt and pepper. Mix together the mayonnaise and the cheese. Spread the mixture over the tomatoes. Bake for 30 to 45 minutes, until filling is browned. Remove and allow to sit for 10 minutes before cutting into slices to serve.
