Rice Pudding Recipe

I went to a luncheon at my friend's house last week and we all had rice pudding for dessert.  Here is a recipe that I found on the Minute Rice website that I would like to share with you.  My friend said that she used quick rice for her recipe, so I think that this will be similar to her recipe.  I hope you all enjoy it!



Classic Minute Rice Pudding Recipe

Makes 4 Servings

Ingredients:

3 cups milk
1 cup Minute White Rice, uncooked
1/4 cup sugar
1/4 cup raisins
1/4 tsp. salt
2 large eggs
1 tsp. vanilla

Directions:

COMBINE milk, rice, sugar, raisins and salt in medium saucepan.  Bring to a boil, stirring constantly.  Reduce heat to medium-low; simmer for 6 minutes, stirring occasionally.

BEAT eggs and vanilla lightly in a small bowl.  Stir small amount of hot mixture into eggs.  Stirring constantly, slowly pour egg mixture back into hot mixture.  Stirring constantly, cook on low heat 1 minute until thickened.  DO NOT BOIL.

REMOVE from heat.  Let stand 30 minutes.  Serve warm.

  1. hmm..now i have to try just because ive never heard of this! I dont have raisins in the house tho- will it not be as good? Thanks!

  2. Hi, your welcome, you can still make it without raisins and maybe a little bit of cinnamon will taste good sprinkled on top. I hope you like it!
