Arugula Salad

I just posted a recipe on Saturday May 4, 2013 for Spaghetti with Peppers and Arugula HERE.  It was the first time I had ever cooked with arugula.  I usually make arugula salad for my family so why not make a different salad instead of making the routine Iceberg, Boston, Mesclun and Romaine Lettuce?  Why not give Arugula a try?  Italians have been eating this lettuce for centuries.

Arugula Salad


Ingredients:

arugula 
1 tomato, cut up
1 cucumber, peeled and cut up
1 small amount of red onion, peeled and cut up

Dressing:

2 tablespoons red wine vinegar
2 tablespoons olive or extra virgin olive oil
salt and pepper to taste

In a large bowl add arugula, tomato, cucumber and red onion.  Add the salad dressing (or whatever salad dressing you prefer) and toss everything together.

Arugula is dark green, peppery leaf that is usually made in salads or as a cooked green.  It is usually sold either by the bunch or as loose leaves.
